We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.
▼RECIPE
【Ingredients】 for 4 persons
1 chicken thigh
4 chicken wings
4 chicken wing drumsticks
1/2 onion
100g button mushrooms
1 tablespoon of Cognac
300 ml of Riesling
100 ml of fresh cream
Some parsley
Salt and pepper
10g unsalted butter
10g olive oil
【Preparation】
・ Cut the chicken thigh into bite-size pieces. Season all the chicken pieces with salt and pepper.
・ Chop the onion.
・ Chop the parsley.
【Procedure】
1.In a saucepan, heat the butter and olive oil. Saute the chicken pieces until they start to brown. Add the vegetables and mushrooms. Saute everything together.
2. Add cognac and white wine, bring to a boil and simmer. (30-40 minutes)
3. Finish by adding fresh cream and parsley to the pan.
