Have too many Anaheim Peppers to eat all at once? You can roast and freeze them for later! Here's how. You can also do this with Poblano and many other types of peppers.

When talking about the history of the Anaheim pepper you forgot to mention that when they originated in New Mexico they were called a hatch peppers. When they were brought to Anaheim the name changed and so did the heat level. Hatch chilis are still grown and are native to New Mexico and are significantly hotter than the Anaheim. Reason being has much to do with the soil. When the Hatch pepper was brought to Anaheim and grown in California soil it slightly changed the flavor and also they just didn’t grow to be as hot. So we continue to have both Anaheim and Hatch peppers, just very slightly different.

I have heard a lot of people have had their peppers come in really slow this year. I had issues with tomatoes being slow, but for some reason it didn't affect my peppers. I have so many I don't know what to do with them all. I hope yours start picking up speed soon.

Awesome! Either way works, I just have a preference for the additional smoky flavor you get from roasting.

Are these easy to clean out the inside after they’ve been frozen? I’ve seen people clean them out before they roast them and freeze them, and after. Any advice is appreciated

I would say removing seeds/core is probably easier before. If you are using the seeds, and only want to remove the skins, this way will work fine, because the skins slide right off after thawing. But would probably less messy to remove seeds beforehand. Hope that helps!

First time growing these and I've been adding them fresh to make salsa so could I still add them to salsa once they've been in the freezer?

I don't think the texture would lend itself well to fresh salsa after freezing and thawing. If you did a cooked/canned salsa they would be better I think. Once frozen and thawed they are pretty soft and work well for stuffing and other cooking applications, but I'm not sure if it would be great in fresh dishes....although the flavor is still there, so it would also depend on your personal preferences.

You shouldn't take the skin off before freezing? Will you be able to take the char off later?

You can if you want, but I find the skins slide off easily when they thaw. But either way works.
