Micah I don't know where you learned it at but I learned through my mom and daddy and my daddy's Mama she's full blood Cherokee she come to Oklahoma on a covered wagon she's born in 1977 and I had the privilege to live with her for many years I don't know how you learn all yours but you know what I'm very thankful for what I've learned and I appreciate what you expose and teach everybody God loves you I love you too buddy

My dad was a MS river commercial fisherman when I was young. We cut the scales outside of the buffalo. Dad called it fleecing the scales off.

As always your videos are extremely knowledgeable and I love how your boys help out and enjoy the feast you provide from living off the land. With the smocking house would different types of wood provide a different smoke that would change the taste of the fish or meat cooking? God bless you all

That’s why buffalo are such good hoopnet and turtle bait...super bloody and it slowly oozes out of em over days :-). Dude that smoked fish looked awesome!!!!! Tastes like ham??? Brother you make some fish that tastes like bacon then you may have something haha

Instead of throwing away your fish "middles" as you call them. Fire up your grill,melt some butter, garlic salt. Baste them as they grill. Great snack for picking the meat.Enjoy and be blessed

I live in idaho and most of the fish we smoke are trout and salmon but I don't like a liquid brine like most people. I use a dry mix of salt, brown sugar, and lemon pepper then use cherry wood. I let the brine work for a day and then rinse off and dry in front of a fan

We always keep some buttered white bread on the table when we're eating whole fish in case anyone swallows a bone. Just take a bite out of the buttered bread and when you swallow it the bone goes with it and your stomach acid does the rest. Also, on common carp, buffalo fish, and Gasper Goos. Where the Y bones are in the meat simply make shallow cuts all the way down where the bones are about a quarter of an inch apart. Through the Bones but not through the entire fish. Then whenever you fry it, can it, bake or boil or smoke it. Those bones simply crumble in your mouth like those in most canned fish.

@@McGieHomesteadAdventures . I grew up eating Gasper Goos as well. But haven't had the opportunity in the last twenty years or so. My grandpa used to catch them all the time on his jug lines and I'd catch them while fishing near his cabin once in a while. He of course caught multiple species of fish but we ate everything he caught. I'm probably just missing remembering how boney they were or weren't in this case. But I appreciate your response. I'm in Texas BTW. Born and raised.

Catfish and buffalo are my 2 favorite to smoke.. 180 degrees at 12hrs will get the moisture out. You can brown sugar them babies too

It was for eating immediately and not long term storage. Also fish absorbs salt very easily.

Throw some of your Hot pepper powder in your sugar cure and try that on your fish before you smoke it, let me know how it turns out.

Try it without the salt...I never salt and smoke a lot of fish.
