Here is a wonderful version of the popular Karipap/Curry Puff, filled with cooked tin sardine. This makes a great afternoon snack and fantastic with tea or coffee.
Sardine Filling
1 Tin/can (423 grams) Sardines In Tomato Sauce
1 Small Red Onion, fine diced
1 Tbsp Fish Curry Powder
1 tsp Chili Powder
1 to 2 Tbsp Ketchup
Sea Salt, to taste
A few dashes of White Pepper
1 to 2 Tbsp Water
1 1/2 Tbsp Peanut/Vegetable Oil
Kalamansi, to taste
