When this came up in my feed, I saw the thumbnail and gasped, then my sad celiac self declared to my partner “that has to be seitan” As the video went on and it was clear that it could be made gluten free, I immediately started sourcing ingredients and made it the next day It was jaw droppingly good!

I must toss out an odd ingredient ground celery seed and a small bit of fennel seed. Way back when I made oat sausage, I disliked other's recipes . So I looked up recipes for real pork sausage. Now mine are vegan but, the recipe of spices were spot on!

Confesh first: pork belly was definitely NOT something I ever pined for (before or after dumping animal meat decades ago) but I'm coming around seeing all the vegan foodie takes the last year or so. Bet this would be great chopped small and used in Asian-style lettuce wraps (even the 'excess' fatty bits). Lots of possibilities!
@SauceStache
@SauceStache Жыл бұрын
YES! yeah chopped up small in something like a lettuce wrap would be awesome! Thicker strips in like a taco or bao bun with some pickled veg, or even in like a stir fry! Veggie Ahn made really good looking braised pork belly I think over rice and that looked outstanding!!

Yay! A recipe that doesn't have any vital wheat gluten in it because I have a wheat allergy which makes it a bit tricky to make certain things or purchase that I want to try, but can't due to it being made from wheat or vital wheat gluten... By the way, I was looking for the place where you could purchase the tofu skin and can't seem to find it...😏😏😏😏 Much appreciated @saucestache... Do you think it works if I sub the coconut milk for flavorless coconut oil?
@SauceStache
@SauceStache Жыл бұрын
So I wouldn't do a coconut oil... I'm not sure how well that would thicken with the heat. I would just try a different plant based milk if you want to stay away from coconut.

@@SauceStache it usually separates like crazy, but I've gotten decent results adding an emulsifier to the mix

Does the white part taste like coconut?
@SauceStache

If you are searching for the coconut flavor, you might taste it slightly, but all in all no. once its seasoned up and in something the coconut isnt prominent at all!

Can I substitute yuba with a double layer of rice paper?
@SauceStache
@SauceStache Жыл бұрын
I would actually only use a single sheet!! But I bet it would work. Rice paper is quite a bit thicker than soy skin

I have already made it before I read your answer (thanks! 🙏) I used 2 rice papers that I soaked in the marinade for half a minute, and it turned out amazing! Rice paper skin is thick and it looks like real bacon skin that I remember from my childhood. Although I have never liked bacon and never ate it - most of the people eat it raw with bread and fresh garlic in the old country 😖 - I must admit that this creation smells very nice... The marbling effect is quite spectacular and tomorrow it will be sliced, fried and put into sandwitches for my guests. Thanks a lot for unleashing the kitchen alchimist inside me! Hugs from Switzerland 💚
