How to make a pillowy soft and fluffy Orange Chiffon Cake
Here's what you'll need:
4 egg yolks
1/4 cup sugar (50g)
1/4 cup oil (60ml)
1/3 cup orange juice (80ml)
a teaspoon of grated orange peel.
1 cup cake flour(120g) or plain flour
1/2 tsp salt (3g)
4 egg whites
1/2 tsp cream of tartar or lemon juice or vinegar
1/3 cup sugar (65g)

Though I haven't made this recipe yet, it looks identical to the orange chiffon cake made by the A&P (under the Ann Page label, I believe) which I remember fondly from my childhood. That cake was also baked in the same kind of pan, and I believe it weighed 16 oz. It had the same texture as this cake - light and spongy. That cake was sadly discontinued even before the A&P went out of business, and I have been missing it ever since. I am sure this will be the same as that one, or perhaps even better. Thank you so much for posting this recipe.

I made this using Mandarin orange (Cuties) juice and grated rind, plus a bit of orange extract for a intense orange flavor. I made a simple icing with powdered sugar/icing sugar, Mandarin orange juice and a drop of orange essence and topped with fresh Mandarin orange segments. It was AWESOME! Very intense orange flavor and wonderful texture.

Could I use a bundt cake pan? I don't have a pan that the bottom comes out. I'm going out if town this weekend to see my daughter and my amazing grandson's. I haven't seen them in month's and I like to surprise them with this cake. It look delicious.
