Ingredients
For the Marinade
1/2 cup Tamari (or regular soy sauce)
1 tablespoon white vinegar
Juice of 2 limes
1 teaspoon Aji Panca (link for all Aji pastes are in Amazon Store above)
1 teaspoon Huacatay (or 1 teaspoon fresh mint)
1 teaspoon Aji Amarillo
1/2 teaspoon ground cumin
1 teaspoon dried oregano
1/4 teaspoon ground ginger
1/2 teaspoon ground achiote powder (or paprika)
1 teaspoon minced garlic
1 tablespoon olive oil
For the Aji Verde Sauce
1 cup fresh cilantro
2 scallions
4 cloves garlic
2 jalapeno peppers
1 cup queso fresco (or parmesan or cotija cheese)
1 Haas avocado
2 teaspoons Aji Amarillo
Juice of 1 lime
1 tablespoon white vinegar
1/4 teaspoon ground cumin
Salt and pepper to taste
1-2 tablespoons water for thinning out sauce (if needed)
For Salsa Criolla
1/2 red onion, thinly sliced (soaked in ice water)
2 Thai or fresno chilies (or habanero) minced
1 tablespoon chopped cilantro
Juice of 1 lime
Kosher salt to taste

👍Since I do love my Salmon, Will def try this one. Just looking at it marinating in the ziploc bag was enough for me. I know its juicy.
