Hey Guy’s! Welcome back to my channel. In today’s video I’m going to show you how to make Southern Fried Collard Greens for your New Years Day Dinner.
My traditional New Year’s meal usually consists of Black-eyed Peas Collard Greens and some type of Pork.
This year I’m starting my cooking early so I can make sure that we have all of our family favorites and I won’t be worn out from all of the cooking.
I bought my Collard Greens from Ingles Supermarket and they were good and fresh. I put my Turkey tails in the crockpot yesterday so the broth would be ready to go.
Now let’s get started with the recipe.
Fried Collard Greens:
1 Pack Smoked Turkey Tails, cook them in a crockpot the day before you want to cook your greens
2 Large Bunches Fresh Collard Greens, cut and washed throughly
8 Strips of Bacon
2 Teaspoons Sugar
Salt and Pepper to taste
1 Teaspoon Crushed Red Pepper Flakes
Using a large cast iron skillet fry the bacon.
Once the bacon is done remove from the skillet and set it aside.
With the skillet still hot add the collards to it with the grease from the bacon and the dripping still in there. Add all of the collards then place a lid on top so that they can start sweating down to decrease in size.
Cook over medium heat.
After about 5 minutes add the sugar, salt and pepper and red pepper flakes. Add broth from the smoked turkey tails. Let simmer for 10 to 15 minutes.
At the point where you can look at the greens and see that all of the water had been released from them and the stems are good and tender you will not need to use the lid anymore. If you leave the lid on and cook the greens too long they will become mushy just like cabbage does when overcooked.
Check the liquid and stir the greens so that everything is cooking evenly. Add more broth as needed. Cook until the greens are your desired tenderness adding additional seasonings to suit your own taste. Make it your own. The whole cooking time shouldn’t be more than 45 minutes to an hour. Once done add the turkey tail meat to the greens if you like it like I do . If not just eat the greens. Enjoy!

Waste not want not. There's nothing wrong with stems like you did. Just like with broccoli. You just heed to cook them long enough.

I love collards 2. I season mine with fat back grease and streak of lean but yours looks delicious. I can't help but notice how clean you are with your cooking!!! thank you for sharing for sharing your recipes!!!

The stems are where the flavor is! But you got to know how to cut those stems? Nothing looks worse than a pot full of stemless FLAT COLLARD GREENS.

we put ours in a 7 qt steamer with neck bones olive oil spoonful of sugar and they are ready in 30 minuetes

Oh wow. I prepare my greens by separating each leaf, looking at it, destem it, stack them on top, then roll , then slice. Wash just how u do. I have to check out the leaves first. Tfs

after we picked and cleaned our greens, granny always told us to double wash. but i think she quadruple washed em. With turnips/mustards we would give em an xtra bath though😄

Oh Lordy, Jackie I really like your style of southern cooking. I'm a native Floridian. That looks delicious! I bet you can really cook up a pot of mustards or also turnip greens, & I like to mix green, especially turnip & mustards. Collards a treat, too. Imo, collards & rutabaga greens tastes similar. I want to try different greens to wrap & cook dolmades, which are seasoned rice, vinegar, seasonings, with mint, onions & garlic, etc, wrapped in greens leaves, cooked in herbed tomato sauce. I enjoy them.

I have a question. Do you add the baking soda every time you add the new water? Or do you just use it the first time you’re washing them?
