Ingredients:
For the short crust pastry:
1/2 cup (120 g) soft butter
3/4 cup (80 g) of powdered sugar
1 tbsp of vanilla sugar
1/4 cup (25 g) of ground almonds
1 pinch of salt
1 egg (size M)
1 + 3/4 cups (200 g) of flour
For the lemon cream (lemon curd):
2 lemons
1 key lime
4 oz (120 ml) fresh lemon-lime juice
1 cup (120 g) fine sugar
2 egg yolks (size M)
2 whole eggs (size M)
3/4 cup (175 g) butter
For the Italian Meringue:
2/3 cup (125 g) of sugar
3 - 4 tbsp (45 - 60 ml) of water
2 egg whites (size M)
