Scott Leysath - The Sporting Chef joins Josh in The Workshop this week to sharpen kitchen knives and share tips about wild game, and knife skills. If you have sharpened your knife in the past two months light maintenance may be all you need. Use a honing rod to maintain the edge of your knives and get the most use of them. When you feel resistance or your knives aren't cutting it, grab the E5 sharpener and get to work. Set the speed to sharpen and get to work - alternate sides and continue to draw your knife through until the machine turns off.

Been waiting for this video just to confirm that I am using the E5 correctly. I was mainly concerned about the tip of the knife. Since I bought this sharpener I finally have sharp knives in the kitchen. Brought the sharpener with me to AZ and now have sharp knives here. Thanks for all the great videos.

I like the ceremic hone that you demo'd. Looked like an M3. I called about one and was told it had been discontinued. You need to either reinstate it or come out with a substitute. P.S. You have heard this from me before but since you demo'd it, maybe others will pile on.

I hear you, I love the M3 personally. Stay tuned we will have a small batch available around November/December. We know the importance of a ceramic rod, and we won't leave y'all hanging.

Today I searched on the internet about M3 and... it's discontinued?! I was always interested in the Microforge feature of M3... Is there a plan for re-run or new/upgraded version?

Thanks, that was interesting. Josh, I noticed that as you pulled the knives through the E5, you didn't stop before drawing the tip completely through the belt as you would with the other WS belt sharpeners. Why?

Good catch.... there is a lot of engineering that went into this in order to make it easier for the user, and eliminate the need to stop on the tip. For the most part it comes down to tipping the top of the belt track back. This makes the back of the belt angle in toward the center of the sharpener and stops it from wrapping around the tip of the knife.

Why don't you use Edge Tester behind you? That's a pretty expensive equipment.

Good eye. We'll get there.... the BES tester offers a very interesting data point, but can be misleading as it measures sharpness only in one place, and is highly influenced by the test medium.

What’s the difference with E-5 than the mk 2 or Ken onion ?

The E5 is designed specifically with kitchen knives in mind. If the majority of your sharpening will be on Kitchen knives then the E5 is the way to go. For something more versatile, the Mk.2 or Ken Onion would be the better option.

I have the Work Sharp culinary E5 for about a year now bought it from a friend that said it was losing power, and he is absolutely right; I can't even rest the knives on the roll anymore, the motor can't cope with the pressure against the belt. While this was working it was great now it's just an expensive toy, very disappointed. Is this a belt slipping or a weak motor dying @WorkSharpOutdoor?

That's odd. Have you tried contacting our customer service team? You can send them an email to info@worksharptools.com and they can figure out what might be the issue and get it fixed.

Im happy to share that after reaching out to Work Sharp, they promptly sent me a replacement for my o ring/belt driver, and it's now working flawlessly. Truly exceptional, one of the few companies that still do outstanding post-sale work like this.

Soooooo... Instead of changing abrasive belts, it just lowers the belt speed after an arbitrary amount of time? I'm no expert but that doesn't make sense to me. And... it only has a limited number of fixed angle guides? Why is this double the price of the Ken Onion? I'm not being facetious, I'm really trying to understand.

Fair questions.... Here are 'brief' answers. The belt is specifically engineered - high speed increases the cut rate and removes more material. At low speed the belt deflects off the knife steel and removes much less material and helps to polish the blade. The timed cycles were set using a lot of research; most dull knives will be paper cutting sharp after one cycle, if not, run it again, OR hold the button for a non-timed sharpening session and the machine continues to run at high speed, until turned off. We instruct to do this in the user's guide for repairing chips. There are three sets of guides 15 degrees, 17 degrees and 20 degrees. The stock unit comes with 17, a great angle for most kitchen knives. The guides are leather lined to be soft touch for high polish kitchen knives. There are a lot of design features and conveniences built into the tool that we did not talk about here.The E5 comes with a ceramic honing rod, an internal vacuum system to pull debris and shavings away from the knife and keep your counter top clean and the special belts are custom made for us. This tool servers a very different purpose than the Ken Onion Sharpener which is a rugged tool for the shop.
