As a youth, I worked as a fry cook at a large cafeteria over 50 years ago. We used the same oil day after day. The oil went from a clear appearance to a dark brown before we ever changed it out. I have no idea what today's practices are. But, I doubt that anything got better especially if there was more costs associated with any improvement.

Deep fries were meant for lard and animal fats that are extremely stable at high heat and can be reused to infinity. The commercial use of seed oils created the toxic conundrum.

A Real Mexican avocado dip is not just mashed avocado. Ingredients are Avocado, diced tomatoes, diced onions, chopped cilantro, fresh green chile (pepper) of your choice, optional lime juice and salt to taste. Plus set aside for for short period to improve taste.

Picual olives make the best olive oil for frying. High smoke point. You can buy Evoo Picual olive oil direct from Spanish growers. Unfiltered is generally available from end of November. I usually buy 5L fresh from grower, just after harvest. Lasts me a year.

@@DebbieTDPI’ve eaten oil-free for 7 years. I know it’s not completely new but it’s not talked about too often to eliminate some oils completely rather than just reduce 🙂

I use sunflower oil on pan for heating vegetables and only fresh organic virgin olive oil for salad. Organic taste neutral coconut oil as butter to my bread. I stop eating tomato, I don't like it and it taste good without tomato on pizza. I make my own simple guacamole with red pepper and red onion, garlic, salt and pepper in a smoothie blender without tomato and it taste delicious. I became too sensitive towards food and mostly eating gluten free food as well. Its a completely new way of living and also a new lifestyle to figure it all out yourself. Been vegan for over 15 years because my body, mind and soul demand it naturally. I always do all to listen to my body's needs and am extremely intuitive.

U_tube forces are gagging up these "other" doctors from saying the truth. If you have watched past videos of these gagged up doctors,then you have a reservoir of knowledge. Most the videos are removed. Lucky me! To have followed for some time in the past.

I always saute my tomatoes in a couple tablespoons of olive oil prior to using in most dishes. For example, I do this when making chilli or pizza sauce. Good to know it creates additional health benefits from the tomatoes.

Dr Li provides valuable information with caring and without arrogance. How refreshing in the smug world of KZfaq. Viewers should know that commercial food processors have generally migrated to high turnover fryers to greatly minimize the production of the compounds he alludes to in degraded oil. They have also moved away from trans fats. The food industry is not some monolithic monster bent on destroying our health. Restaurants use batch fryers that have lower fat turnover rates and, with reuse, can accumulate higher levels of free fatty acids, monocyclic fatty acids and other oil degradation products. MacDonald’s isn’t trying to hurt your health either but has difficult challenges. Avoid the soft drinks, share a regular sized french fries with a friend for a treat, and eat all of the hamburger. The bun might not be the healthiest part but, as my mother used to say, “Eat a variety of foods; you have to eat something.”

I think it's okay to deep fry in olive oil as long as it is kept under the burning point temperature and is not reused over and over again. There might even be a safe number of times you could try a batch of specific items before the oil is no longer safe. The problem with deep fried restaurant food is that they definitely use the same oil for a week or even longer. I've seen fast food fryers that had dark black oil. Plus, most restaurants use canola oil. So it's already toxic before they overheat it and reuse it for a week.

Good points! Also I heard always stay away from all vegetable seed oils and never use them any time. These 8 harmful vegetables seed oils are the most widely used unhealthy fats:: Canola oil, Corn oil, Cottonseed oil, Grapeseed oil, Rice bran oil, Safflower oil, Soy oil, and Sunflower oil. (Organic versions of harmful seed oils are still harmful.) There are many specific reasons why vegetable seed oils are harmful but I not have space to list them all here. ~The good news is that it is relatively easy to upgrade your oils with healthier options full of good for you fats. These are the top choices of multipurpose oils that can be eaten cold and used for all types of cooking:: Olive oil, Almond oil, Avocado oil, Butter, Cocoa butter, Coconut oil, Ghee, Macadamia nut oil, Peanut oil, Beef Tallow, and Pork Lard(this last one would be the least healthiest one to use.) ~In addition to the above oils also hemp culinary oil can be eaten cold or used for low heat cooking. Flax and walnut oils are healthy fats that should not be exposed to heat so they are best used for dressings and dips. When shopping for healthier upgrades in oil keep in mind that refining turns good oils into bad. Healthy fats degrade when they are refined and can go rancid during shipping or storage. So look for fresh, unrefined, cold pressed healthy oils to make sure you are getting the health benefits.

@@modestacattaruzza7400 ~You’re on the right track with those three most healthiest oils to use cold on salads with EV Olive Oil ‘or’ to cook with on low to medium heat with Avocado Oil. But to stop Butter from turning brown when you’re frying with it then add a little bit Oil to the Butter. Coconut Oil is another healthy Oil and Beef Tallow is also good. There is differing opinion on whether to use Peanut Oil or not for high temperature cooking? ~But of course do “not” use any Vegetable Seed Oils like Canola, Corn, Soya, etc. on food at any time ‘except for’ lubricating mechanical parts ‘or’ coating wood in woodworking.

By the way, would like to ask if there is any way to find out if the oil has been re-used in cooking since the structure changes after high heat? I've been cooking with extra virgin olive oil for over 20 years exclusively now and I go through a bottle every month. The only things that I can't make with it are mayonnaise and aioli, but I rarely have them anyway. I go for a decent quality oil with olives from the region of the manufacturer but never cared to check the actual variety until now.

Dr Chatterjee, extra virgin oil single olive is quite common in Spain. Picual is a strong flavour one and a higher smoke point.

I do belgian fries in tallow, it has an even higher smoke point. Lard is like 370F. Delicious, doesn't go rancid, tons of Vit D

Dr. Li. 2 questions: you implied that unsaturated fats are better than saturated, can you provide any population study indicating that one type of fat is better than the other? Why is oil from raw, cooked coconut considered better than from dried coconut oil since the second one is dried by sun exposure, then squeezed and never gets to boiling temperature as does the cooked method?

I live in the USA, went to Walmart’s website and looked at every single bottle they offered and not one had listed the type of olive. All that was stated was this: Ingredients: pure EVOO ??? I have no idea how we are gonna find out what olives they are.

If you don't heat the oil but put the meat after seasoning in cold oil no flour let it cook it will brown perfectly. It's tender I do chicken wings I use Vegetable oil

I used to leave in building.. downstairs there used to be a restaurant often at night track whith big sucking tube used to suck the restaurant west desposale..one day I asked why this track do that? They answered me it removes the frying oil that the restaurant used wich is stacked there....I thought what that oil does inside the bodies of people......

Just don't burn it. Put food in at the first wisp of smoke. It won't be totally safe. You really have to steam it for that, but then, no flavour.

🌸 if you mix fry foods with sugar, yes that’s really bad Remember people of Indian eat fried foods several times a day, they don’t get fat because most are on foot walking all day and physically working. They also eat a wide FRESH variety of vegetables & fruits with only whole foods. They do not have processed foods, every thing they eat is fresh organic If you want to eat naughty foods you have to be prepared to do exercises to burn it off And you must eat the rainbow of fresh whole foods. What I mean by this, it’s fresh organic and it wasn’t frozen or wasn’t processed in tin or cut into billion fragments in bag. It’s something you have that was freshly harvested. Try growing your own herbs, try buying all fresh vegetables from a reliable source that you know is a high fresh grade Legumes you eat were soaked night before & you boil, rather than open a tin. Potatoes were pealed and not from a tin, etc

I’ve heard that extra virgin olive oil looses its health benefits ( as you have said ) when it is heated to high. So instead I use a mixture of extra virgin olive oil and avocado oil because avocado oil has like a high heat point of like 425 degrees. So what do you think of what I’ve just said? Secondly I’ve been trying to find this Greek olive oil you talked about ( what kind of olive was that again ) and haven’t found it anywhere. Where may I ask do I find this Greek olive oil that you recommend, being I continually try to only eat foods that provide nutrition and health benefits to my immune system.

I wouldn't use any olive oil for cooking. No matter how raw the quality, once heated, it turns to a trans fat as it has only one double carbon bond.

You can only buy olives in jars, tins or plastic containers over here and they have large amounts of salt added to them. Most unhealthy. The tinned olives also have preservatives added to them. It's impossible to buy olives without added salt or chemicals.

I heard california ranch olive oil is proven & tested. But it has to be the 100% california version. Thats what i uses. Also chosen foods avocado oil is tested.

Put the olive oil in your refrigerator for a few hours if it turns cloudy ore starts to coagulat then it's the real thing

@@joegonzales772 that method isnt 100% considering lots of olive oil are 60-70% olive oil & the rest is veg oil. So lots of brands are still going to solidify if they have a high ratio of pure olive oil.

It depends on which. Omega-3s are very probable in terms of being beneficial. The omega-6s are more of a mixed bag. Any oil that has gone rancid, and PUFAs do so more quickly, is harmful. Just so happens that the way cooking oil is used(periodicially until the bottle is done with), means that the older the oil gets, the worse it becomes but not noticeably. Someone with a mega bottle from Costco and takes 8 months to finish the oil is likely in worse shape than someone who buys a tiny bottle every month.

That is a good olive oil to buy. Also if you are planning on using high heat put some butter with the olive oil. You can always use avocado oil. it doesn't burn easily.

I don’t cook or deep fry in Olive Oil. Once heated , the chemical composition changes due to its lower flash point when compared with Avocado oil. Better to use cold as a salad dressing.

There are good olive oils made in CA, but many are blended so be careful with what you buy. If it doesn't say single source or varietal it is likely blended. Sadly, they do not need to tell you what it is blended with. I buy my olive oil from a particular part of Greece. It is quite pricey. However, I trust the producer and the estate on which the olives are grown and therefore I'm willing to pay the additional cost.

Dr. Li, I've learned that among the best oils for deep frying is peanut oil. It has a very high smoke point. When oil smokes, it's a sign it is breaking down. Avocado oil is another good one. If you are going to use butter, clarify it first. Clarified butter has a very high smoke point. Whole butter has milk solids that burn at a low temperature. You can saute foods like fish with whole butter and add olive oil if you like because saute is a low temperature way of cooking. Pan searing steak in butter is IMO a bad idea. Add the butter after the steak is cooked. An excellent herb for increasing your telomeres is astragalus root. Frying in peanut oil and astragalus root come from Chinese food and herb knowledge. There is much to learn from molecules not profitable or of interest to the pharmaceutical industry. Pharmaceuticals are good for curing disease, Herbs, oils, and other molecules can be good for improving health and extending life and health. Some have beneficial effects in treating disease. Western doctors are not trained and don't know this. Is it a lot of work to study the biochemistry and the results of research papers and sift them out from the ads? Yes but it's your health that's at stake. When there are promoted "cures" for various illnesses in particular conditions I look at reviews of the best supplements in those categories and then look to see what's in them. Buying the ingredients of the best of them is far cheaper than buying to $69 a bottle for a monthly supply. I sometimes consult my doctor about them. For example, she warned me not to take DGL which is an ingredient in one digestion motility product. I take some of the others like star anise.

BTW, the reason she advised me to avoid DGL is because it interacts with a prescription drug I take. This should not stop anyone else from using it but I'd consult my doctor first especially if you are taking prescription medications.

More than likely the oil was denatured before it ever got to the restaurant to be used. Whatever oil you use make sure it's derived by cold pressing. You're best choice in a mainstream grocery store is extra-virgin olive oil in a dark glass bottle. If it taste rancid it's no longer good.

What is the point in living with fear all the time thinking this is bad for the heath and that is bad for the health. Yes, you live long if you eat heathy but tasteless food. Don’t you want to enjoy what you eat even if you lose few years of life. I will say eat what makes happy do not worry about death. No one knows for sure that particular day.

We usually heard those chemical content discussion from doctor who are quoting them without reference to where they got them and most if not all doctors are not good chemist.... The problem with Evoo is that they tamper with it. Best to buy it from your country if you can. It should have a harvest date and a "use by date" too. Try not to get different Evoo from different countries bc that's where they tamper with it. If you get it organic great. I don't cook/heat at all. They add dyes and other inferior oils to it and then they want to sell it to you at a premium. I know Braggs is pretty good and so is the California Ranch one too. Get the Evoo one and read the label, if it's mixed that is a hard pass. The oil from China is the worst so they now ship from Philippines to circumvent that. Buyer beware... cooking oils - Olive oil - olive oil is intended and healthy for use only in cold pressing, for a quick period of time from its release from the pot, which is stored in a cool place and dark (no daylight) Olive oil for cooking/frying/baking above 310 Fahrenheit or 155 Celsius (which is a low boiling point and any cooking in a pan does this) The fat in olive oil is the double bond that makes it unsaturated In a long fatty chain of hydrocarbons, there are two types of fatty acids, CIS fat + trans fat and the person wants CIS type fatty acids and the reason is that the person does not have an enzyme to break the double bond of fat in a double bond. So if you heat oleic acid fat beyond the smoking point which is 155 degrees Celsius So the heat turns the double bond of the fat into a trans fat.
