SIMPLE SOFRITO Recipe | Sofrito For When You Can’t Find Ají Dulce or Culantro

In this video, I’ll show you how to make and properly store an alternative Puerto Rican sofrito for those who don’t have access to our traditional culantro/recao or ají dulce (or both).
Now, while ají dulce is harder to come by unless you live in or near an area with a high concetration of Puerto Ricans/Caribbeans, culantro/recao can still be found in Asian grocery stores as, ‘spiny coriander’ or ‘long-leaf coriander’! However, substituting it for extra cilantro works just fine! ☺️
This will give you a really good sofrito so that you can still make those special dishes we all love, no matter where you live in the world. ❤️
Ingredients:
• 3 large onions (any kind)
• 2 -3 bundles cilantro (1 of these will replace a bundle of culantro - spiny coriander)
• 3 Multi-Colored Peppers (or 1lb mini sweet peppers)
• 1 Green Bell Pepper (can also use cubanelle peppers)
• 4 - 6 Garlic bulbs, peeled (substitute for 1 cup pre-peeled garlic. NO store-bought minced garlic or garlic paste! Must be fresh!)

If you live in a place that is hard to find a Caribbean store. Go to the Asian Market. You can find everything there too.

Amazing recipe. Thanks for posting both a traditional and a accessible sofrito. Just for everyone elses sake. I made this reciepe pretty much as presented. It makes about 7 cups of sofrito. Great if you plan on cooking more puerto rican dishes. But for those just starting in cooking puerto rican food, I would prolly cut the quantities in half.

Oh my gosh I was so happy to find this and thank you for doing it! It’s very difficult for me to find the peppers and culantro however, I did buy a plant at a local Asian nursery and I’ve tried growing it but because of the drought I’m just not keeping up with how much water is needed. I was able to harvest about 10 small leaves to add to the cilantro that I just made. Thank you again for posting this. You did a great job for your first video.!!!

If I wanted to make a smaller portion of this instead of making 3 months worth, how much would I need of each ingredient?

All of the ingredients are in the description box, so if you’d like to size it down, I suggest cutting the ingredients by half.

Wait, im so confused ive made diff types meaning ive followed many different ingredients adding oil or water with it ...everything comes out watery lookin im so confused!

Veggies have a very high water content. Even if you don’t add water or oil, the water inside the veggies will separate a bit when blended.
