These Snickerdoode CreamCheese Bars are a triple threat - They are a blondie, snickerdoodle and cheesecake all in one! So much deliciousness!!
Ingredients:
Cinnamon Sugar Mixture:
1/2 Tbsp granulated sugar
1/4 tsp cinnamon
Snickerdoodle Layer:
3 Tbsp butter, softened, salted
1/4 cup granulated sugar
1/8 cup or 2 Tbsp brown sugar
2 Tbsp beaten egg
1/4 tsp vanilla
1/2 cup plus 1 Tbsp all purpose flour
1/4 tsp salt
1/8 tsp baking soda
1/2 tsp cinnamon
Cheesecake Layer
4 oz, cream cheese, softened
2 Tbsp granulated sugar
2 Tbsp beaten egg
1/4 tsp vanilla extract.
Cinnamon Sugar Mixture
Mix together sugar and cinnamon set aside.
Snickerdoodle Layer:
In a bowl cream together butter and sugars until light and fluffy.
Add in egg and mix together.
Add in flour, salt and baking soda and mix until combined. If needed add a bit of water to make it come together.
Press 2/3 of mixture into a parchment lined 9 x 5 baking pan.
Sprinkle top with half the cinnamon sugar mixture.
In another bowl cream together the cream cheese, egg, vanilla and sugar until smooth,
Pour mixture over top of snickerdoodle layer.
Top with remaining cinnamon sugar mixture.
Add remaining snickerdoodle dough mixture in small flat pieces.
Bake at 350 degrees F for 30-35 minutes until golden brown around edges and middle is slightly jiggly.
Cool and enjoy
