So Good w/ Rice! Super Easy Chinese Style Silky Beef 滑蛋嫩牛 Beef Chuck Tender Stir Fry Recipe
Serves 2 to 4 pax, depending on whether you're serving other dishes.
INGREDIENT LIST

Marinated beef
---
40ml (1.35 fl oz) water
1 spring onion stem
2 slices young ginger, julienned
250g (8.81 oz) beef chuck tender, sliced thinly
1 tbsp oyster sauce
1 tbsp light soy sauce
0.5 tbsp premium dark soy sauce
1 tsp Chinese cooking wine aka Shaoxing Huatiao wine (optional)
1 tsp brown sugar
1 tsp ground black pepper
1/3 tsp baking soda
1.5 tbsps cornflour (cornstarch)
1 - 1.5 tbsps cooking oil
Other ingredients

4 slices young ginger
2 cloves garlic, chopped
250ml (8.45 fl oz) water
0.5 tsp chicken stock powder
2 tsps oyster sauce
A few dashes white pepper
0.5 tbsp light soy sauce
A small bunch of your favourite leafy greens
Some cornstarch solution
2 eggs, beaten
Some spring onions, chopped (optional)

I love this recipe, Roland! One thing I do is to mix the baking soda into the water so that there's no chance of a weird taste on the beef.

Actually, you can use plain egg white to help tenderize the meat as egg white is alkaline.

This looks fantastic! If you were serving it with noodles how would you do that? Would you mix them in at the end so they get coated in the sauce?

Noodles on the plate or better a bowl, pour over beef and a quick mix if needed is what I would do - same over rice approach

Hi Winnie. That’s from a Korean brand but unfortunately I can’t remember the brand name. Since you like this pan, try looking for non-stick frying pans with granite coating. Hope this helps.
