Soft Ginger Biscuits are so warm & comforting. They are super easy to make & the whole family will love them.

These biscuits (cookies) come in two forms - soft just as this recipe & crispy as with most store bought Ginger Biscuits. I personally love the soft version & with this recipe the ginger isn't very overpowering, there is a great balance between all the ingredients use.
They are also known to have these amazing cracks after their baked, to get this beautiful finish, make sure the bicarbonate of soda is fresh.
This is also a great bake to gift someone & also perfect for those Eid & Diwali/Deepavali parcels.

Soft Ginger Biscuits Ingredients (makes ±24 biscuits (cookies)):
◆150 grams butter / margarine, room temperature
◆¾ cup brown sugar
◆1 egg
◆¼ cup honey
◆2 tablespoons vegetable oil
◆Pinch of salt
◆2 ½ cups all purpose flour
◆2 teaspoons baking powder
◆1 teaspoon bicarbonate of soda
◆3 teaspoons ginger powder
◆1 ½ teaspoons cinnamon powder
◆½ cup castor sugar

Made them today and they came out absolutely perfect. I did chill the cookie dough for 45 min. to stiffen up a bit to make rolling out easier. Not sure but they may need some extra ginger powder. I'll edit this comment if I'm wrong. Ngibona from 🇿🇦 Jozi . No need for more ginger. Its perfect. Thank you.

Aw I'm glad you enjoyed them ☺️ there isn't a need to chill them as I find that takes up more time lol but if it works for you then go ahead and keep doing it...the ginger is according to your taste, in our household we like it with the amount I put in but again it's all up to your preference so add more if you wish ❤️

Have sold quite a few 1.5 kg buckets.. 500g choc. chip cookies, 500g coconut cookies and of course 500g ginger cookies. Its a big hit. Thanks.

Hi Denisiya! Thanks for this recipe, can't wait to try it. Just want to know if I can substitute the honey with golden syrup and if leaving the cookies in the oven for a little longer at a lower temperature will result in a crispier cookie (which is what I love). Heys, you're most welcome 😊 Yes you can switch the honey for golden syrup, I wouldn't recommend leaving it in for longer because the mixture is for a softer cookie in the middle...if you leave it longer it's still going to result in the same form...

Nice, what can I use instead of castor sugar? Because I have all ingredients except castor sugar

If you have a blender you can pulse the normal white sugar a few times and you will get castor sugar - don't over blend or else it will turn into icing sugar. If you don't have a blender then use normal sugar but I recommend castor sugar because you won't have a grainy biscuit as I find it works better
