You don't have to worry about the meat being undercooked, Leah. It's probably been smoked at least 12-14 hours if not more...

People sometimes mistake the pink as undercooked but it is the Smoke Ring on the outer part of meats

A brisket cooks 12 - 24 hours. It’s usually pulled off the smoker at 195-198°F so all bacteria are long dead. It’s cooked “low and slow” so it is incredibly tender if done right.

Indeed. Homestyle BBQ (I think it's called Homestyle, maybe Homestead or Homesomething) in NYC or Brooklyn has a BBQ Pastrami that is SUPER pink, it literally looks like rare meat. But it's very well cooked and super delicious.

I will pack my brisket in kosher salt and slow cook in the oven for 12 hours then smoke it for another 3-4 hrs, juicy and delicious is all I can say.

In Texas, we have access to all the good BBQ, but pro tip, when you come to visit here or Louisiana, make sure you get the seasonings, ship the meats to yourself if you can, get at least dry ingredients you can use, because some things just will never taste the same without them. When we visit New Orleans, we bring a whole cooler to bring back gumbos, and stocks, and sauces, and seasonings and since most people are super friendly, we will ask, how do you make this or that, or what is their best tip for making a good xyz. A lot of people love to talk about their cooking or their families best recipes and you get the best advice along with places to go that aren't overly priced touristy trap places.

Maybe one of the reasons why BBQ has been and is such a thing in the states is due to our abundance of hardwood varieties great for smoking. Oak, Cherry, Pecan, Walnut, Apple, Mesquite etc. A big country with a lot of forests equals lots of firewood.

The beautiful thing about America - there are several different types or styles of BBQ, originally unique to specific places/regions/states - and now you can find great examples of the different styles in big cities like my hometown of Philly. BUT...yeah, you can't find better than going to the places/region where a specific style started.

​@@ChristaFree a lot of people do not know the triad of smoking meat's. Their above all, except Louisiana I heard is pretty close behind them. Because of all the Cajun seasoning's. I saw a video some yuppy saying LA has the best smoked meat. Looked like a franchise he was eating at.

This BBQ looked very good. The pink, or redness, around the edges is from the smoke during cooking. The bark and smoke ring is the best part of the meat. ❤

Good job, Leah! Also, easiest way to think about the diff between grilling and bbq, is that grilling is fast like 3-10m, while bbq is lower temps for much longer, often hours. And holy crap, I've been watching Jolly for more than a year, and I never realized it was Josh + Ollie, lol! Final comment - I've actually eaten at Blue Oak. It was really good, and I'd recommend it? Thx for the reaction vid!

Texas and Louisiana are right next to each other, so the methods and tastes are similar. Btw, when you do visit Louisiana pronounce it "Lusiana", it's how natives pronounce it. Brussel sprouts are bbq, but not tailgate food

Sorry, but I'm born & raised in The Boot, and it's pronounced Louisiana. You may find a Cajun or two way down on the Gulf Coast to say Loo-zi-anne. Wide spread misconception, not your fault.

Maybe somebody has already said something about the potato, but just in case, it's probably an Idaho russet. They tend to grow large like the one in the video and are perfect for making a meal out of one. Especially when it's loaded

A loaded potato has butter, chili, sour cream, bacon and chives. And some places scoop out the potato first to mash it up first then put it back in the potato.

Barbecue is low and slow while grilling is hot and fast. So if you have the heat up high, you’re grilling and not barbecuing. One of the things that make barbecue really good is when it includes either all wood or wood mixed with the charcoal. My personal favorite is mesquite wood. that smoky goodness is to die for.

My butcher shop here in Northwest Arkansas aside from all of the amazing meats and cuts they offer also offers pre-cooked sides, breads and desserts. One of my wife’s (and my) favorite sides is a baked potato salad. It has all the flavors of a baked potato- bacon, sour cream, butter and chives but made into a cold non-traditional potato salad. Which of course here in the South is very common alongside BBQ. So tasty regardless of which one one chooses.

Listen I'm not trying to be mean but where in AK are you? My best friend lived in Rosie now she lives in Havana, and I have yet to have a good meal in AK in fact the last time I went for a visit I packed the cooler so we would have something decent to eat So if you are near her then I will make sure we come by and try you out the next time I Visit.

@@davinasampson6557 Richard’s Country Meat Market is in Fayetteville AR. Good food can be found all throughout Northwest Arkansas. There’s a wide variety of really good restaurants throughout the area. I know that more rural small towns across the state don’t have the resources to offer much with regards to variety or quality when it comes to places to get a good meal.

Most potato salad in the south is smothered in mayo. The one you described sounds amazing, like you are subbing mayo for maybe butter and sour cream. I think I would like that just as much as I enjoy German Potato Salad.

the way it works type/temp/time grill/high/fast -5 - 120 mins BBQ/low/slow -10 - 16 hours Smoking is an adjunct to BBQ called Texas BBQ Hawaiian BBQ involves the whole pig in a pit covered with coals that potato is called a Idaho russet potato

Even though Louisiana and other states aren't as well known for their BBQ doesn't mean that those states don't have places that do serve really good BBQ.

When it comes to BBQ in the US, the meat is pretty much cooked the same way everywhere. It's the rubs and sauces that is the big difference.

In America we love our food and to cook for others. We're very open and welcoming with our foods. Each region of the US has food that is it's specialty and you can't find anything that compares to it in other parts of the US.

Man, I feel so spoiled because my brother in law makes massive amounts of BBQ nearly every weekend. He gets freshly made sausage and other meats from a local butcher. We drink beer all day while waiting for it to cook. It's amazing.

Grilling is basically cooking the meat for immediate consumption, i.e. hamburgers, hot dogs, steak. Each portion is sized for one person. Barbecuing is done with whole cuts of meat like an entire chicken, pork loin, or even an entire pig. it is done low and slow with, depending on the region, different kinds of sauces and rubs. It's a process, while grilling is a method of turning raw food into cooked food in as little time as possible. Grilling also normally uses direct heat for cooking while barbecuing uses indirect heat.

A Barbeque in America can be just like a Braaivleis most people would have in the backyard or a picnic. The professional BBQ and smoker guys are a different story, they have championship competitions and special awards for their skill, knowlege and experience.

The pink is called a smoke ring. The meat smokes at 225-285 for 8-12 hours. It's fully cooked, the pink is just a chemical reaction to the smoke the prevents the oxidation of the iron content in myoglobin.

The pink is called the smoke ring. That stuff cooks hours and hours. Thats why the pink is around the outside and not in the middle. Its from the smoke.

The large potatoes are russet potatoes, and they don't all grow that large, but the largest ones are worth more, because restaurants for instance will pay a higher price per pound for the large ones. You can also buy the large ones at the grocery store, but they cost more per pound than the normal-sized ones and are usually sold in smaller quantities, sometimes even individually. However, russet potatoes _in general_ are the most common and most affordable cultivar of potato. The red-skinned potatoes, and the yellow-gold potatoes, cost at least half again and sometimes double the price (per pound) of russet potatoes, which, depending on supply and time of year and stuff, can sometimes be comparable to or even more than the price of the really large russet potatoes.

Leah--remember that the smoke in a barbeque pit makes meat turn pink/red. The meat that is pink, here, is pink from the smoke!, not because it hasn't been cooked long enough. Pink ribs have probably been cooked more than 6 hour. the pink brisket, probably cooked 10-12 hours! (maybe even more!)

Prime Rib when fully cooked properly gets that pink color. Part of the slow cooking will also add a pink color as well.

I moved to Texas 10 years ago and promptly gained 80 lbs that i still havent lost and i was a vegan until they brought out the brisket, I had to try it and i have never gone back. Our food is delicious, it doesnt matter where you eat or what you eat, the food in Texas is phenomenal. Fast food or high end restaurant, it does not matter. LA is just as good. You will love Buccees, its about 15 mins from where I live. When you go, buy a few jars of the candied jalapenos (❤), We smoked some tritip last night and i made some sandwiches using the candied jalapeno and it was awesome. You will love buccees, you will probably be there at least 2 hours to see everything so prepare.

You mentioned fishing… I know in the pacific NW you can charter a boat and fish for salmon. They’ll filet it, package it, and ship it to your home. My uncle and his son do that one and then (we’re down in Georgia) they also do the deep sea fishing for red snapper off the Florida coast and do the same. You should look into it to see if they’ll ship internationally and do that when you visit.

Oh and the pink in bbq, isn’t it being undercooked, that’s the color meat takes from the smoke and slow cooking, plus any marinade/seasoning you use. And the dark pink on the edge of the meat is the smoke ring.

Bass Pro Shops does sale ladies clothing and shoes/boots it’s considered outdoor wear. Also, you can use your grill as a smoker. Instead of the coals being directly under the food, you push them to the outer edge of the grill and cover the grill so you’re trapping the heat inside of it. Yes, some restaurants really serve baked potatoes that large.

If you notice with BBQ...It's pick from the OUTSIDE in not the inside out. that's because the smoke will turn it pink that way.

Jono...Texas native here. Austin is great, it's centrally located and close to San Antonio. It's home to Terry Black's BBQ (this video) and it has great steakhouses and Tex Mex, it's also home of the Texas Longhorns as well being the beginning of the Hill Country.

When you go to the best BBQ houses, get there very early! You will likely be in line with a few hundred other people. The food will be worth the wait! Remember to remain friendly, as most those places will kick you out for being grumpy or argumentative. They believe in the concept of Southern hospitality. Friendly, fun and courteous!

The baked potato soup is probably just a homemade cream of potato soup. Several soup companies here in the US make a cream of potato soup, and with added pepper and chopped green onion makes it quite good.

It’s pink from the smoke. All the meat gets fully cooked to temperature ….it smokes for hours and “The pink-ring” is a sign of a long and well smoked meal.

My ex-son-in-law made the most AMAZING, TENDER, DELICIOUS, JUICY, pitted pig for my other daughter's wedding reception. He pitted it and let it cook for over 16 hours. By the reaction of everyone, should have pitted 2 pigs (they went back for 2nds & 3rds, and even caught some putting it in containers to take home). I hope you will get to make your dream come true and come to the USA and have all the BBQ you can handle! It's a good thing that Texas and Louisiana are next to each other so you won't have a long drive to get to each place.

BBQ is different than Grilling. BBQ is smoked/cooked over low heat for a long time. Where as Grilling is cooking medium to high heat for a short time.

My Dad smokes meat, he's won an award. Our church alway's ask's him to smoke meat for church event's. Rib's usually 2-3 hour's and their usually fully cooked and you want prep them coated in olive oil or mustard to lock in the juces. But Beff brisket and Pork shoulder is 4-8 hour's in a bath, of beef broth vegetable stock or apple juice with applecider vinegar and baist them with a brush often. Applecider vinegar break's the meat down, to make it tender. And than slow cooked in the oven overnight. You can over smoke meat easily. You want the natural taste of the meat and spices to come through. The biggest thing, cook it how your family likes it. Fruit wood is the best, we like pairing apple wood and apricot wood. You can do hickory and mesquite but the have a powerful flavor, so we would pair a fruit wood like cherry with it. Some people hate hickories taste.

I've never had Britain's version of Fish & Chips, but I will say that if it's truly very oily, as I have heard it is, then I can tell you what's wrong. The oil isn't hot enough. When you're deep frying food, and the oil isn't hot enough, then it allows the oil to seep into the food while it's cooking, and that is NOT good. When we do Catfish fish fries at church for Lent, the one thing I was told by one of the old timers was that you gotta get your oil up to a certain temp BEFORE you put your first piece of food in it. When the oil is at that specific temp (can't remember what it was as that was over 25 years ago) the batter starts to cook immediately instead of sitting there and soaking up the oil. The act of deep frying is when you want to crisp up the outer layer (the batter) while cooking the inner food and sealing in the juices. (That's kinda what the batter is for.) So again, if the UK's Fish & Chips are too greasy, then they aren't letting the oil reach the right temp. And once you start cooking something in it, it rarely if ever rises in temp. So you need to let it reach temp before putting anything in it. Ah, OK, just looked it up. The best oil temp to deep fry is between 325° F (162° C) and 375° F (190° C).

Now as for how long this stuff is smoked, I usually smoke ribs for about 6 hours, and up to 12 hours for my brisket. I let my ribs get to about 200 degrees internal temp (F) and my brisket to about 192. I've found that if I go higher, it gets dry and crumbles. Some people like it crumbled, I like mine sliced.

Baked potato soup is more like a chowder than a soup (if done properly). If he was saying it was like watery mash, they probably literally put mashed potatoes in it as thickener, which doesn't really work as it makes it more watery than chowdery.

Pink with BBQ doesn't mean undercooked. If anything it's more cooked. The sauce and/or dry rub makes it look undercooked at times. Frankly, the average cooking time for BBQ is about 16 hrs.

Normally, pork is added to beans. “Pork, and beans,” is canned, and served as such. Brisket is commonly beef.

That's a medium size potato in some of the states. I one use 3 huge potatoes to make mashed potatoes that fed 7 people with big portions.

Just so I can confuse you furthfer, there is also Kansas City BBQ, there is a white BBQ sauce that I can't remember where it is from. When I lived in Virginia we use to get a pulled pork BBQ sandwich that was served with a scoop of Cole slaw.the first bite was Nirvana! I have made BBQ baby back ribs in the oven with commercial BBQ sauce. It took 4hours before I was satisfied and it was delicious. Why don't you try that before you come to the States. Use pork belly and look on line for a BBQ sauce recipe. Good luck!

Texas has various shopping opportunities with outlet stores that sell the same items available in NY, but without the great risk of crime. Jono, besides the BBQ Louisiana has things like boudin (a type of sausage) as well as gumbo, jambalaya, and a host of foods you might find exotic. A great side that I would recommend from Louisiana is Dirty Rice. Despite the awkward name, it is real good. The closet way to describe it is southern style fried rice.
