I'm Southern and I am going to show you have to make buttermilk cornbread from scratch. I like Jiffy Cornbread, but sometimes I have to make the REAL stuff. I know there is a big debate about whether sugar should be added to cornbread to make it Southern. Well from my research it seems that sugar was not an everyday addition to cornbread as sugar was expensive back in the day. But my from my personal experience I have had a little sugar in cornbread often growing up. So to add sugar or no sugar? Well I say it's up to you. But the butter and bacon grease, yea that's gonna stay!
Ingredients
1 cup flour
1 cup cornmeal
3/4 tsp salt ( could also use 1/2 tsp if your bacon grease is really salty)
1 stick unsalted butter melted
2 eggs
1 tbsp baking powder
2 tbsp - 1/4 c brown sugar ( I used 1/4 cup) (optional)
honey ( optional)
2 tbsp bacon grease or butter for pan
1 1/2 cup buttermilk

Aight now!! I make my cornbread the exact same way almost. I never thought about pre-heating “Hattie-Mae”, that’s my cast iron skillet that is seasoned to the gods lol! I will try that now. Thanks for the tip!

OMG I tried your recipe for New Year's Day dinner 2023 and it was off da chain! It went perfectly with my chitlins and blackeyed peas! My wife and I don't normally eat a lot of bread except for holidays but we finished your cornbread in 3 days. I will definitely be using this recipe again! Keep up the good work!

Cornbread is one of those really interesting dishes that says a lot for such a simple concept. Cornmeal used to be known as Indian meal, because it was already in common use when europeans landed. Indigenous people showed colonists to make cornbread for survival, but it was a very different kind of bread than we would recognize as cornbread today. As a class of landowners developed, cornbread was seen as a poor man's food, commonly consumed by poor white and free black subsistence farmers, and those individuals held captive in chattle slavery. It was a way to get good quick and cheap energy. Anyone who could afford to eat bread made from wheat did so, because it was seen as the more sophisticated thing to consume. Typically, before grist mills became industrialized, cornmeal could only be purchased during corn harvest, and usually it was the white corn variety. This corn was very sweet. After industrialization, corn was turned into meal before it had a chance to ripen; it is with that change we begin to see sugar being added to cornbread. People sometimes feel very strongly about sugar in cornbread, but i think about 2-4 tablespoons probably makes it taste more authentic. Loved the video, sorry for the corny rant!!

I use bacon Grease in replacement of most oils! I have it always next to my stove. I can’t wait to make this cornbread!

New to Your channel & new subscriber & I love the food You cooked. I always say there aren't really any rules to cooking EXCEPT FOR BEING CLEAN & NOT DOUBLE DIPPING WITH UTENSILS. What got Me to continue watching Your Videos was seeing just how clean & sanitary You are. No Rules is to be as creative as one wants to be, bringing a new twist\trick to Soul Food {or any style cusine}. I don't eat pork for nearly 15 years. I do eat Beef bacon & spicy beef sausages. Renders about as much grease as pork. I will try My homemade cornbread same as Yours but with *_Beef Grease._* Thanks

Yes ma’am!!! Love all this. Especially with that bacon grease. I do that too. I call it dirty cornbread 😂 if you don’t have a jar of grease already (like a good southern woman should) you can just cook up bacon in the pan first, remove the strips, and pour the batter on top of the grease.

An an Aussie I enjoyed the cornbread I had in my trip to the US. We don't offer cornmeal over here in major supermarkets and someone suggested using a course polenta as an alternative, any suggestion. I'm binging your Channel, I suppose to be working on my novel, but I Keep coming back as this is my kinda food.

My mom would use lard instead of butter and fatback grease instead of bacon grease. Other than that it's pretty much the same, maybe not as much sugar. Cornbread and pinto beans, cornbread and milk, cornbread and collard greens, it's all good.

I never made cornbread before, I always wanted to try. I made this cornbread with the 1/4 cup of light brown sugar. It was the BEST cornbread ever,so good I could eat it by itself . I don’t want no other recipe but this one. Thank you so much for posting this.🙏

when substituting the buttermilk how much sour cream and milk should I use

when subbing with these ingrediesnts i just use equal amounts. so if i sub milk for buttermilk I use the sam amount. same with sour cream. sub the same amount buttermilk for sour cream.

I would suggest butter as an alternative. I dont think the flavor of olive oil would match. last resort would be vegetable oil.

@@jewelyoung3372 I have used Coconut oil refined & unrefined, You will have a mild coconut flavor using unrefined. Also, yes You can use aluminum, however, I suggest to line the pan with parchment paper to help prevent aluminum from leeching in the food. Reason I suggest this is due to Aluminum is toxic for the body & brain. There will be those in disagreement, okay by Me. I use Aluminum foil, I always keep it from contacting My food. Bake\Cook in what You want, My cookware of choice is cast iron, stainless steel and bakeware glass (Pyrex), never anything nonstick, that's toxic as well.

Cornbread shouldn't have sugar and shouldn't be mixed that much. It needs to be mixed like muffin batter. Also prefer bacon drippings to butter.

Can you cook fried cornbread? If not.then you've never eaten real cornbread. I never had baked cornbread until I was in my 30's. If you never had it fried then you don't know what you're missing!!!
