If you roast the bones in a hot oven before you make the broth, you will increase the flavor in the broth.

That's is just amazing that the butcher allowed you to come in and film and ask questions. Having a band saw to quickly cut through the bones is a huge time saver. Thanks for sharing this process.

Those beef shanks are used for osso bucco. That's an expensive cut at the butcher shop! I rarely see it at the grocery meat counter.

Having a bandsaw for all those cuts is definitely a bonus - our neighbors here have one just like that one, it makes it so easy for doing shanks, ribs and tbone steaks and whatnot. Another thing you can do to make it easier is use a reciprocating saw like your saws-all do a lot of the bigger bones. You can get meat blades for them, but they are expensive. But even a cheap wood cutting blade can easily do the spine cut, that's what I learned when I processed my deer last fall.

Watching the professionals butcher was like a lesson. It was like a classroom with information and techniques that could be used for the future. And It’s always interesting watching you all as a family work together. It was a great video.

Thanks for sharing this video and thanks to the butchers who allowed us to see how they do it. Having that saw really saves a lot of time, or maybe not if you added in the time it takes to clean that saw when your finished. It probably takes a steam pressure hose to clean that equipment. As a custom exempt butcher I appreciate you doing this. I am for both ways! We do make it look easier from daily doing and equipment. However both ways are great ways!

That was great to see Miss P. working on cutting up the side of beef! I think you guys are awesome doing your own processing! I'm glad that this steer was easier to cut up since he was smaller! Wow, you guys are getting fast at this! That bone saw you have is awesome. You guys are making some very delicious hamburger patties! My mom always washed the bone sawdust off the meat before she would cook it. My husband asked me why I was rinsing off our pork chops from our home raised hog we had processed for us. I told him I was getting the bone sawdust off. He'd never seen anyone do that before. I don't know if anyone else does that. That was great that your processor let you film them cutting up your side of beef! It did look easier to make the first cuts on the side of beef when it was hanging up! When we first took our hog into be processed it was only 50 cents per pound but now it costs a dollar per pound. They have better facilities than us and they will freeze it before you pick it up down to zero degrees Fahrenheit. Our processor uses butcher paper to wrap our meat with. This was fun to watch Contreras family!

This is one of my favorite videos that you have done. I’ve always wanted to see the professional processed beef next to hand processed beef. Really cool that you used the same cow but two halves and then laid it all out next to each other for the wrap up. Super super neat idea and something I have always wanted to see. Thank you!

Nice comparison! We fill out a cut sheet. Each processor varies a bit with certain cuts of meat. The last one we used will do your ribeye steaks with or without bone in each steak. The last place we went to also allowed you to order your steaks cut 1 inch or 3/4 inch think. The ground beef you had a choice of 1 pound or 1 1/2 pound as standard packing of ground beef. They'll do the cuts however you'd like beyond their normal cuts with a fee. I will say the processors make it look easy. Our friends who own the cattle we purchase haul the cattle in, and the processor handles the dispatching, cleaning, aging, processing, and packing.

As you said it took 3 1/2 hours times 5 people equals 17 1/2 hours of labor. If you value your time at say $10, (remember McDonalds now pay $14) equals $175. Next add the cost of cooler, bags and electricity you are above $200 and have better cuts which are better frozen. labeled and vacuum sealed. They charged $160. On the positive side you are certain you get your own meat because it never left your possession plus you get the "scrap" even if it only goes to the pigs and chickens. I use a battery powered Sawzall with a metal blade to cut bones. I feel I get better control and cleaner cuts that way. As you see I do my own butchering in spite of the fact that it is not terribly efficient.

Being home butchers ourselves, we REALLY enjoyed your video and seeing you learn this art..One hint I wanted to give you is, when we take a slaughtered pig or cow to be cut up at the butcher shop, we dont have everything wrapped.. we ask them to leave the hamburger meat unfrozen and just in a big bag.. we than bring it home and put it in patties and some in lb packages ourselves.. it doesn't take that long to do just that yourself with them wrapping everything else and frozen.. we do the same with the sausage meat.. they grind it for us and we bring it home and put our own seasonings in it and make patties and seal it.. it saves us money and we can have it just like we want it... hope this helps a little.. thanks again for such a great video.. I used to deliver shaved ice to a meat processing facility because the mixed it with their ground meat to prevent deterioration from the heat within the meat.

We butchered our six steers recently over a few weeks, and it’s very hard work, but loved it now our freezers are full. Good job. My hubby wrote Beef on some packets meat on others and steak on some lol it’s a lucky dip in our freezer. Lol

Great video it's funny is 9 out of 10 meat personnel in stores nowadays you give them a hand quarter and they look at you like huh. I enjoy watching guys breakdown beef like I used to have to do I started in 71 and I just retired in 2016 being a chef and a master butcher. I love watching your home videos when you do the butchering God bless which one✌

The fat is the best part of the beef. It is the healthiest fat for cooking and should be turned into tallow

your trailer needs a rail that takes roller hooks so you can push and pull the meat without climbing into the trailer.

Fantastic team work! Way to go! We just got a side of beef from our niece’s family but a butcher processes it. However, I ask for the fresh liver, soup bones, dog bones & beef fat (to make tallow). The fresh liver was tricky cutting for me & rendering the tallow took me a few hours yesterday. Blessings to all 🤗💜🇨🇦

We prefer lean and love how our locker cuts our beef, the hamburger is excellent and as a family of five we've found that 1.5 lb packages works perfect for us 💜

If someone is thinking of using a processor, please check with them first. Here in Nebraska there are actually not as many as you might expect, and they are ALL backed up - you might have to wait months to get a date to bring in your meat! I know I purchased half a lamb, and it was 4-1/2 months before I got the meat - because it took that long to get the animal in to the processor.

I bought a meat band saw and grinder combo from harbor freight years ago it makes light work to process all the hogs I do. Something to look into if you’re going to process your own meat. The less it seems like a job the more you enjoy doing it.

I'd just assume doing it yourself also ensures no 1 added anything in that you may not have wanted, only real way to make sure is doing it yourself.
