Your cooking has influenced me so much! I love your recipes and storytelling. Kimchi is now a regular in my house and I have a whole shelf for salted shrimp, fish sauce, and rice vinegar. This is probably my favorite Maangchi recipe to date (I've seen almost all of them). I make this dish at least once very two weeks. The only ingredient I'm ever missing when I need to make it is gochujang, but even now I can just order that off Amazon. I love switching up the proteins - I've done everything from a combination of chicken thighs and bacon (non-traditional, but my partner's favorite), to a cubed Boston Butt, and even sometimes just using tofu. I love throwing in some extra veggies, particularly carrots and cabbage - this is especially good when making a tofu-only, vegetarian version. It's also my favorite weeknight meal because it only takes one pot, most of the cooking is just waiting for the stew to cook (this is the perfect time to clean up your kitchen), and it's a fairly inexpensive dish that is extremely filling! I love this recipe so much, but not as much as I love Maangchi. Thank you for teaching me how to cook the tastiest and healthiest Korean food ever!
