Hello Dale I often watch your videos of your cabin that you built a few years ago. You have very well done your cabin . I am french and live in Quebec, Canada. I have been thinking for a long time about building a cabin in my backyard. You made me want to start this summer building my cabin. I'm thinking of doing it 14 feet by 12 feet. Hi, Dale: glad you and Angel made it through the winter well. If you think your house is cold, you'd love mine! I like it well below 16c to sleep upstairs, and don't usually push it over 17c downstairs! The cooler, the better for sleep. I can not stand the summer heat for sleeping. (In Connecticut.). I'd never survive in the south.

When I do, every ounce of energy and every penny in my pocket will go to building myself a warm, cosy, dry place I can finally call my own. Hi Dale. Your cabin is so Zen like. I really like a quiet place that is relaxing in itself. Our woodland place can be wonderfully quiet, with just the sound of the wood stove. Then the TV comes on and the spell is broken... talked to your green house folks in TN this week and they are looking for a 2018 catalog to send me. 2019 ones are still waiting to print. Melting going on in New Hampshire. March may go out like a lion though. Turning colder and windy. I think I will make buttermilk biscuits tonight :-)

Hi, first I love a good mystery novel and I will have to check those out. Growing up I enjoyed Agatha Christie novels. Your chili looks scrumptious! I make mine with a bay leaf and I swear the most important ingredient is a pinch of sugar! Thank you for talking about maple syrup; that brought back a lot of childhood memories.🍁 When we would visit my uncle near the Parliament buildings in Ottawa we would take a wagon pulled by Clydesdale horses into the Gatineau Mountains. When we entered into the sugar bush you could see the pales hanging from the trees to catch the sap. After turning it into syrup they would pour strips of the hot syrup across a snow topped picnic table and roll sticks in the first part of the strip to make suckers for us kids. The snow would cool and harden this syrup into candy for us to eat. Yum! Thanks for reminding me of this time. Have a great St. Patrick's day! 🍀🐇Yvonne

Great vid Dale. I use a toaster like that at my cabin. I drape a piece of aluminum foil over the top and it makes the toaster more efficient. TFS!

I so wish you would think about doing a video about yourself - in other words, your occupation, retired or not, just personal history in general. A Southerner’s perspective on the height: I think you’ll get higher rising biscuits if you use a straight-sided sharp thin metal round cutter, not a fluted one. Take care to cut straight down and don’t be tempted to twist IN THE SLIGHTEST to loosen the biscuit from the cutter. Dipping the cutter in flour between cuts will help. Twisting the cutter sort of smears the sides of the dough sealing any layers together. Make sure your baking powder is double-acting, fresh, and measured accurately. I find that sifting the leavening into the flour distributes it more evenly than just whisking it in. Hope these tips help to get a higher, fluffier biscuit. Your little oven probably was part of the problem. The crust might have been formed quickly by a bit too high temp, causing complete rising to be restricted by the hardened exterior. Loved the cozy visit as always. Now I want chili. As I watch, I have sourdough bread proofing. I used my 40-year-old starter this time with your recipe, weighing ingredients in grams, just to see how it compares with your starter. The Primary batter recipes I sent are more liquid than your recipe. This time, I’m using your kneaded recipe with the refrigerator proofing from the no-knead recipe in sort of a 3-way hybrid. It’s looking good so far! It was great to get a good long visit to the cabin. Thanks for sharing!❤️

Thank you Shelby I have shaped the loaf for the basket after the first 3 hour proofing and then refrigerated it over night and straight into the oven cold and it works really well and the cold dough is much easier to slash.

Good morning Dale! It is Saturday morning here in Ontario and I woke up to a snow covered ground. I will be heading to my cabin to start a fire and make percolator coffee as well. There is something so calming about doing those two things that I really look forward to it. Just a little note, as I was driving home from work yesterday I saw my first robin. I hope that is a good sign that this crazy winter might be ending soon. Thanks for inviting us to your cabin! It is always fun to see what you and Angel are up to.

I've been reading Maigret novels just recently after someone bought me one for Christmas, surprised that I've never read any before but really enjoying them.

The biscuits looked delicious...good color. You mentioned you hoped for greater rise. After moving to the Deep South, I learned some biscuit tricks. The cutter makes a big difference...edge should be SHARP like a knife (they sell thin metal biscuit cutters here)...otherwise biscuit is compressed by dull cutter. Also best NOT to twist cutter (smears the dough on sides of biscuit, preventing the biscuit from “flying”). Thanks for the great videos!

So happy to see another cabin video! You can never make too many. Angel looks so content to be wherever you are. She just expects to be part of whatever you are doing. So smart. Loved watching you build that chili. I have never put carrots in mine. Does that make it sweeter, to cut the acid of the tomatoes? I'm going to try it. It seems like a healthier alternative to adding a bit of sugar, which is what I usually do. Snow started late for us this year. Then we got dumped on. Finally seeing warmer temps. I thought it would never come! Looking forward to your next video. And spring, lol.

Great video Dale! Glad to see you in the cabin again. No one has ever been able to fool me with soy based meat substitute, I can always taste it, very bitter. I'm allergic to soy, not sure if that makes me more sensitive to it or not, but in all my 60 years, I've always told the difference.

Dale Calder Dale, how do you clean your potjie? I just ordered the same one you have (I LOVE that pot, and could use the extra iron in my diet). I’ve read online a few ways, the best being to scrub it with a stiff brush while just rinsing (no soap ever), then dry well. Leave it out then to dry fully, then use some balled up wax paper to lightly oil it with flaxseed oil on the inside and inside the lid, also. Mine says it was pre seasoned with flaxseed oil already. I’d just like to take care of it the best I can. Thanks again, Dale.

@@myheartisinjapan3184 I just wash it in dish detergent like any other pot and rinse it really well. I dry it by putting it on the gas burner for a few minutes to evaporate all of the water then I oil the inside with a paper towel and a bit of olive oil.

Dale Calder thank you so much, Dale. I didn’t feel too great about not using dish detergent to clean the pot after use. I felt you couldn’t really get it clean otherwise. Good to know I can do it this way. As always, thanks again, Dale. It’s a great looking cooking vessel...excited to get it.

Like everyone else, I was missing your cabin videos. Thank you! I’ve often wondered why so many of us enjoy watching other people and what they do. I guess it’s just different, interesting, educational, possibly enlightening. By the way, I read and enjoyed all the Slater & Norman mystery series! I have gone on to read others by the same author, P.F. Ford.

Well, FINALLY!!! What a great way to end the week. I think this is the second time you have made the buttermilk biscuits. Look as wonderful as before. I am hoping you served Angel something other than the chili, LOL. I, too, am a vegetarian. In our local market, there are two varieties of veggie chorizo, that is very good when combined with chili or anything else. I still can't believe there are two dislikes. They must be professional trolls, scouting all of the KZfaq accounts.

Thank you . The chickens have survived another winter and are anxious to get outside but there is still too much snow on the ground. Most of mine are older birds now and didn't lay in January and February but are starting to lay now.

Hi Dale, thank you for sharing your lovely cabin with us and of course your beautiful Angel. I lost my 15 year old cocker spaniel Zoe last June and we still miss her terribly. I was admiring your sofa and was wondering if it is a jack knife bed and where you purchased it. We are looking for something similar to replace the one in our travel trailer. Thanks again-Shelia
