This is the most delicious squash I’ve ever tasted. I’m not a huge fan of yellow squash, but my husband planted some this year, so I decided to try your recipe. IT WAS DELICIOUS. I love squash casserole! Yummy! I usually mix my ritz crackers for the top with melted butter. It makes the topping a little more yummy and crunchy. Thanks for making this for us. ♥️♥️♥️

We do cook so much alike and we are nearly the same age....I believe you said you are 70 and a half, I'm 68 and a half.....and my name is mama JoAnn and your Mama Joyce....we cook a lot of like....I think we have a lot in common. I don't know about these phones either, and I don't know to text either. I think its wonderful that your Son video's your cooking, that gives yall a lot of quality time together....I have 3 Son's, no daughters....I just lost my youngest Son a couple weeks ago with cancer....he just retired after 24 yrs in Army National Guard, full time...I sure miss him. I like to use zucchini and yellow squash together--I don't mash up the squash that much so you can still see both. To really make it fancy, I add chopped water chestnuts for a little crunch. This casserole is so good, it's really hard to mess it up!

Glad to hear how to freeze squash. Sounds so easy. Now I can just pull what I need from the freezer. I particularly like to chop it and mix it with corn and red peppers and saute it in a skillet, good with a bit of bacon grease to coat the skillet. I also like to add chopped zucchini to my spaghetti or ziti. That way, I don't need to serve it with another veggie side dish. My mom would make stuffed zucchini just like stuffed peppers. She would get an extra large one, and scoop out the seeds to make a tunnel in which to put the meat/rice filling, then cook it whole in the tomato sauce mixture. When serving, all you had to do was cut it into desired pieces.

I just saw this... I love squash any way you make it.. but love squash casserole!!.. have never mashed up the squash.. but I will now.. usually use some mayonnaise but may try this... I don't but crackers in it and i top it with french fried onions... this recipe looks soooo good... gonna have try!!.. Thanks Mama Joyce!!

My sister has a zucchini casserole that also adds grated carrots. She sautes them with the onion. Her recipe is different in that it uses seasoned breadcrumbs and a can of mushroom soup, no cheese. She also cubes the squash. I want to try yours. I love watching you cook. Thank you for sharing your recipes and cooking tips. P.s. My friends and I are seventy too. We don't believe it as long as we stay from the mirrors. You and your recipes are a pleasure to watch.

We do squash, onion, bell pepper, cheddar cheese, butter, eggs, salt and pepper, a splash of milk, and a little flour to thicken it. Mix, bake and eat.....it's like dressin'.....so good. My sister makes it Thanksgiving and Christmas.

I imagine one could use Zucchini squash as well for this recipe, which is usually what I have on hand, or you could mix yellow with the zucchini. I panfried sliced zucchini just last night. I dipped in egg wash, then corn flour and fried in deep oil. I usually dip it in Ranch dressing to which I add a bit of prepared horseradish from a jar. I season it after it is fried with a little garlic salt. I think the Ritz crackers would make a good breading.

I made my mom's Squash Casserole last week.....Soooo Good!!! I was looking for your Chicken and Dumplin's on here, but didn't see it. Just wanted to let you know that I made it today and I was surprised at how good the dumplin's turned out. We've always used shortening in ours, and since I didn't have any I decided to do it the way you do. I did make my chicken in the pressure cooker.....Chicken breasts with Chicken broth for 30 min. The reason I did it this way is that I am making seasoned chicken for tacos too. When the chicken was done I pulled some out, shredded it, and pulled the majority of the broth out of the pot and put it in my stock pot. I added some taco seasoning to the cooker with the rest of the chicken and turned it back on. While my stock pot came to a boil I mixed up the dumplin's, and got those cooking. So glad I did this.....Now we have two meals with very little effort!!! Thank you for the yummy recipes!!!!! This Mississippi Girl loves her dumplin's. Also, I love that you did the drop dumplin's and not the rolled out kind.

When I make squash casserole I add a can of mushroom soup and a stick of melted butter and 1 grates carrot and 6oz box of chicken stuffing mix mix well in pan and bake then eat oh I also add a bit more cheese Going to try yours. 🙏❤🙏❤

I love squash casserole! I also make it with zucchini, and instead of Ritz crackers, I use Pepperidge Farm Herb Dressing. My mom made it that way. It's a family favorite. Yours looks delicious, too! Do you make okra patties that are fried? If you do, I'd love to see how you make them.
