yeah he had a special chair to lower him. And then Sandi Toksvig took over and she's under 5 feet tall, so they had to install the reverse.

you can actually do this if you get a bottle of water, get a bit of pressure inside and put it in the freezer and cool it down to 0 degrees celsius. It will not freeze if you don't shake it or if you don't have small particles in it because the crystalls need something to hold onto before they can form and if you then carefully pour the water on ice it will freeze instantly and you get a tower that looks exactly like the one in the video just out of ice

But the 'sand' stuff at the beginning is so little and the tower is huge relative to it. Did it expand, is the tower mostly air or what? I love science even though I don't get it sometimes.

The short answer: the grains are the same as the liquid but in its crystal form (which was powdered into the small grains), because of the contact the liquid made with the powder the liquid rapidly shifted from a liquid state into a solid state long answer: sodium acetate which is the chemical name of the liquid can form intermolecular bonds due to the polarity of the molecule, this polarity is similar to that of water (having a positive peak and negative point at similar angles). Below a specific temperature (0 degrees for water and above room temperature for the sodium acetate) they can form a solid, however this doesn't readily happen. Often times the molecules have to be physically bumped into a certain orientation to form a crystalline structure or small particles or other impurities in the liquid such as dust can be used as a foundation for the crystal to form (known as a nucleation site). Once the crystallizing begins it will branch off along the liquid, which is why when the liquid touched the already crystallized powder it rapidly crystallized as it was being poured. Hope that helps

basically that sodium acetate solution is in a state of hyper saturation in other words it has more sodium acetate than the water should ba able to hold. This is produced by making a saturated sodium acetate solution at high temperature generally boiling water where the water can devolve more and then letting the solution cool. many crystal need some form of imperfection or perturbation to crystallize, known as nucleation sites, something that clean glass wear doesn't have. those crystals act as nucleation sight and don't need to be of the same compound but it generally works better and something as little a a scratch can cause nucleation. in fact in chemistry training we are taught to scratch the glass when something refuses to crystallize. This process is used in commercially to produce hand warmers with the little metal popper producing the perturbation to crystallize the sodium acetate.
