I worked the fry station in 1991-93. It was ten times harder then. You had to fill each fry basket manually, and then we had like 6 carts full of them with 24 baskets on each cart that we used to wheel into the freezer. It was such a manually intensive job!!! I was only 14 years old and in shape and it was exhausting. It’s amazing how much easier it is today with the fry loader. Also, the fry bags were a brown paper rectangular box that we had to open. 😮

It’s a franchise owner who usually watches out how generous or how stingy a carton needs to be filled. It’s used to be quite generous like this 20 years ago. I think now they are becoming quite stingy with the volume for the same or more expensive price everywhere. There’s also this typical greedy corporation in HQ side that decides how big the carton is supposed to be as well. Lol.

Been working in Fastfood since I was 14 (I’m 23 now) and making fries is probably the chilliest position to be in but the one you sweat the most at 😅 I’ve worked McDonald’s, Burger King, a few street kitchens but currently working at a Swedish Fastfood chain called Max. Probably the best kitchen setup out of McDonalds, BK, Max take the top spot. Menu has healthy and very unhealthy options as well but all the food is really good, varies of course between different restaurants with different suppliers, but for the most part. I’d say for the most part it’s never about the work you do but the people around you that makes the job really fun and enjoyable. Then again… it’s also fun finishing 20 orders within 5-8 minutes (in the kitchen! You’re a real G if you can do that in the register)

Haha no worries buddy! It’s 36 years for me!! It was a grill call…. Lay 12 hamburger patties, then when you turn them lay 6 Big Macs (12 Pattie’s again) then keep alternating between 12 and 6 every turn. When it got crazy busy you would go 12/6 continuously lay which meant you had 24 burgers cooking on same side and you just keep putting down more!!! Good times!!

@@ArtieLovesPancakes143 I guess I remember that being called “batch cooking”. Drop 1/4 pound patties first, then reg patties. Reg patties would cook faster and come up first. By the time you seasoned, stacked and put in warmer, the 1/4 pound patties would be coming up.

This brings back memories for me. I was 27. I just got my first apartment after struggling with alcoholism for a very long time. I was happy to have this job, very thankful because it paid for my bills. I lived alone with my cat, in a nice little one bedroom in Gillette Wyoming. Walked to and from work. Mainly had me on fries because I was quick and filled them right. Those were some of the most peaceful days of my life... I miss them.

Kind of surprised that one basket of fries only fills a few orders of fries. Then again, compared to my local McDonald's, you were pretty generous in filling those orders pretty full. How many baskets of fries do you have to keep going in the fryer to keep up during peak times?

I don't work at McD's but have a good sense as to how foodservice works. During peak hours, you'll likely see all fryers used in a rotation. You've got high-temp fat being introduced with frozen or even refrigerated product. Fryers, like most equipment, have recovery times. That is to get the base heating unit (in this example - fat or grease) to consistently produce a good product within a certain amount of time. Overload that cooking unit over and over again, and performance goes downward. So that's when you know to open up the 2nd or even 3rd fryers - distribute the breakdown and get better recovery.
