I worked the fry station in 1991-93. It was ten times harder then. You had to fill each fry basket manually, and then we had like 6 carts full of them with 24 baskets on each cart that we used to wheel into the freezer. It was such a manually intensive job!!! I was only 14 years old and in shape and it was exhausting. It’s amazing how much easier it is today with the fry loader. Also, the fry bags were a brown paper rectangular box that we had to open. 😮

We can adjust the size of the basket according to how busy we are! Also we can drop up to 6 baskets here at a time!
@mil2k112 жыл бұрын
I don't work at McD's but have a good sense as to how foodservice works. During peak hours, you'll likely see all fryers used in a rotation. You've got high-temp fat being introduced with frozen or even refrigerated product. Fryers, like most equipment, have recovery times. That is to get the base heating unit (in this example - fat or grease) to consistently produce a good product within a certain amount of time. Overload that cooking unit over and over again, and performance goes downward. So that's when you know to open up the 2nd or even 3rd fryers - distribute the breakdown and get better recovery.

@@mil2k11 You can see that even though they weren't busy he was rotating through the fryers as he dropped the baskets. At the start of the video there was a basket in fryer 3, and then he dropped his next two baskets in fryers 1 and 2.

Props to S Patula for the insanely good camera quality. I don't know why, but this is really satisfying to watch even if the job is by conventional wisdom not something people seek out. I guess the issues surrounding living wages and whatnot don't necessarily mean the job itself would be bad.
