Spring is harvest time for strawberries and rhubarb and there is no better way to celebrate the arrival of these two fruits than in a Strawberry Rhubarb Pie. While at first glance they may seem an unlikely pair, they really do go wonderfully together, with the sweetness of the strawberries balancing the tartness of the rhubarb.

Yes, if the pie has a top crust, then you can always make it a lattice crust.

One trick I was taught for making a lattice top: Do the actual "weaving" of the pre-refrigerated strips separately; that is, not directly on top of the pie. I do the weaving on top of cardboard rounds from pizzas, which I keep for this purpose (you could do it on a sheet if wax paper, etc, as well). When the lattice is finished put it back in the 'fridge while you move on to the next step. When you're ready to "apply" the lattice, just slide it off the cardboard onto the filled lower crust. I find this works better for me for a couple reasons: - It's easier to do the weaving on the flat surface. - As the dough is being woven it doesn't get sticky from absorbing juice from the filling. - Moving the "pre-woven" lattice onto the lower part of the pie takes much less time than building the lattice on the pie. Consequently the pie spends less time out if the 'fridge (I.e. It doesn't get warmer and risk getting softer/musher).

As with any pie crust, the first day it is quite crisp so it will break a little when you cut it. However, after it sits overnight the fruit will soften the crust so it doesn't break as easily.

Such a great one! I watched all the videos with pie crust separately, then 45 min of strawberry jam making on stove, then this then that. So many steps, electricity, while you can put all together and in stove, brilliant! Taste was great, with ice cream so cool!

I live in Mississippi where rhubarb is very difficult to grow. In fact, I'm the only one I know of that has ever grown it. Even then, only one plant managed to make until it had what was judged to be a sufficient quantity of stalks to make a single pie. For that one pie, your recipe got the nod. Part of the reason I chose your recipe was because having only one shot at it, mistakes could be ill-afforded and your excellent video took all the guess work out of the process. So thank you for a most excellent video. I'll let you know how it turns out. The pie just went into the oven

I just made this and it came out perfectly! The liquid set up beautifully almost like a soft gel. I let the pie sit for about 5 hours after baking.

Delicious. This was my first time ever making a pie. I am so glad I used this recipe! Only minor thing was the insides was runny even after waiting 2-4 hours. I believe it was because the strawberries were very juicy and maybe I tossed the fruit too much. Next time I'll add more corn starch. Thank you again, my family loved it

Are you talking Fahrenheit or Celsius? The temperature is 400 degree F (200 degrees C).

Great video. It's almost impossible to find competent people who measure chunky ingredients by mass instead of volume. A cup of rhubarb is a useless "measurement".

If you precook the rhubarb it may end up quite mushy once you bake the pie.

4 hours after coming out of the oven seems a bit excessive. I've made strawberry rhubarb pie before and as long as you wait until it's not piping hot, it's fine. The juices do need to thicken a little, but the pie can still be slightly warm when served.

o0Affinity0o Of course, you can always serve the pie sooner. But I like to err on the side of too long rather than not long enough. :) Because if you cut into the pie too soon, there will be too much juice which a lot of people don't like.

Years ago, in the '60s, our neighbor grew some rhubarb. They didn't like it so they would give it to my mom. My mom was an excellent cook and baker. She would make rhubarb pie. I thought it was terrible. Really the only thing ever that she made that I didn't love. Well every year, more rhubarb and more pie. It grew like a weed. One evening I snuck into the neighbors yard and killed the rhubarb. I am not proud of this. I told my dad and he smiled a little. I don't think he liked it either.

Can you tell me if the pie when cut, held it’s shape? And can I use frozen fruit bc rhubarb is not always available? And can you tell me if this was sweet? I tried this morning testing both frozen strawberries and rhubarb. Is cornstarch better than tapioca to get it to not be runny. Thank you!!! August 13, 2021

The pie may be runny so just experiment. Add one have cup of powdered tapioca to it before cooking if too runny.

Big fan of your recipes!!! I recently made this pie and followed your directions step by step. I noticed a lot of excess moisture in the pie and it is still very wet after it cooled. Do you have any tips on how to prevent this in the future? Thanks so much!

Neil Juckett Do yourself a favor and plant some rhubarb. Where I live in West Virginia, it likes the east side of the house under the soffit. It comes up on it's own every spring and is very hardy. I think the east side gets only morning sun, is cooler and shaded during the day, and is not exposed to west winds from storms. I think it likes water, but I can't say for sure. Where it is, there is plenty because there is poor drainage and the water tends to perk into the ground in that area. Your mileage may vary. I noticed where a member had trouble growing in Mississippi. There may be varieties of the plant which do better in warmer climates. It would be worth some research on your part. I can only speak from personal experience. I have wild mint growing alongside the rhubarb, and they get along very well together. They grow like weeds! :)

I know this is an old video, but my thought is, why not cut the lattice pastry on the parchment then you don't have to move it... Haven't tried this particular recipe, but looks nice, thank you

The pie dish is there. It's just that it is a clear pie dish so it's hard to see.

Yes. Also never cook it in an aluminum or teflon pan or plate because the chemicals will leech into the food. Always cook it in glass.

I know this is 5 years old .... but 1 pound of rhubarb weighs the same as 1 pound of strawberries ... about 450 grams.

+Kanzafatima Shahzad Since you don't have rhubarb, I would use the Berry Pie recipe. However, if you're only going to use strawberries then I would add a little more thickener, because strawberries have a lot of water. www.joyofbaking.com/BerryPie.html

@@beliling , it can be sour to eat raw, but what it tastes like depends on how much sugar you add. Some like to mix strawberries with it instead of too much sugar. It's has both a sweet and sour tarty taste. I prefer it just as is. It's a really great and easy perennial to grow as well. The older it gets the more it produces, almost like a very slow growing weed that doesn't spread too much. It's one of the earliest growing plants after winter and is very hardy. I pick the plant entirely before every hailstorm so it doesn't get ruined. Hailstorms will cause the big leaves to rip and may also destroy the stems otherwise. The more you pick it, the more it seems to produce. If you don't want to eat it right away, simply cut it up in cubes and freeze it. You will never starve if you have a couple of rhubarb plants, but the leaves are unsafe to eat. Best and easiest fruit in the world to both grow, pick, cook, and eat! It's also delicious with raisins. It tastes so different every time depending how a person cooks it, what they make with it, what spices they use with it, hoe much sugar they etc. It's nice just cooked in a pan until it's soft too, mixed with sugar and served over ice cream! Best and most versatile plant in the world! Yummy!

You do need to let the pie cool completely so the juices can thicken before cutting into it. If you did and it still was runny your strawberries may have been juicier than normal in which case you could add a little more corn starch next time.

Yes, I think these were just especially juicy berries, and I think I tossed them a bit too much before baking, but it's actually not as bad as I originally thought before cutting into it., it's still perfectly edible and delicious, my mom and little brother are both loving it. I was thinking just a little bit of unflavored gelatin may also do the trick? Thanks for making this video!
