【Sugar free】 Rice Flour Carrot Cake Recipe|Gluten Free (Wheat Flour Free)|100% Rice Flour (Komehyaku)

Ingredients(Pound mold 170mm/80×170×H64)
50g dates (can be replaced with sugar)
100g carrots (net amount)
45g unsalted butter (brought to room temperature)
1 tablespoon maple syrup
1 egg (brought to room temperature)
120 g rice flour (Mizuhochikara)
If you use a different rice flour, the amount of moisture will change.
Spices of your choice
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 teaspoon cloves, etc.
Pinch of salt
50 g raisins (walnuts are also good)
1 teaspoon baking powder
1/2 teaspoon baking soda (or 1/2 teaspoon apple cider vinegar if you don't like the bitterness of baking soda)
Preheat oven to 180°C (356°F).
40 minutes in a hot water bath baking pan with 50°C (350°F) water
Cream cheese frosting
10 g unsalted butter (brought to room temperature)
2 tablespoons maple syrup, sugar or maple sugar
100 g cream cheese
After putting the frosting on top, chill in the refrigerator for about 20 minutes to finish!
(The frosting is low in butter and sugar, so if you chill it too long, it will become hard.
