- 1 tsp Black pepper
- Salt to taste
- Oil, for cooking
Optional additions:
- 1/2 tsp turmeric powder for color
- 1/2 tsp red chili powder for extra heat
- 1/2 tsp ajwain (carom seeds) for flavor
Method:
1. Prepare the Batter:
- In a mixing bowl, add the semolina, yogurt, and water. Mix well to form a smooth batter similar in consistency to a pancake batter. Let it sit for about 15-20 minutes so that the semolina absorbs the liquid.
2. Add Vegetables and Spices:
- To the batter, add the chopped onions, green chili, grated carrot, bell peppers or tomatoes (if using), coriander leaves, black pepper, and salt. If using, also add turmeric, red chili powder, and ajwain. Mix everything well. Adjust the consistency by adding a bit more water if necessary.
3. Cook the Chilla:
- Heat a non-stick skillet or tava over medium heat. Drizzle some oil on the pan.
- Pour a ladleful of the batter onto the skillet and spread it gently with the back of the ladle to form a thin circle.
- Cook on medium heat until the edges start lifting off the pan and the bottom turns golden brown (about 2-3 minutes).
- Drizzle a little oil around the edges and on top, flip the chilla, and cook the other side until it's golden and crispy.
- Remove from heat and repeat with the remaining batter.

- Serve the suji chilla hot with chutney, yogurt, or any dip of your choice. Popular options include coconut chutney, mint chutney, or tomato ketchup.
