I have found my tribe. I am a foodie. I love to cook. I love to food shop. But my new addiction is hours of Daze, Days of Daze. I have been making jam my whole life but just this year have I been bold enough to put down the sugar and started canning.. I never knew about fiesta ranch but today I came home with my first two packets and a bag of pinto beans. Thank you so so much for doing the work God created you to do.

Just did white potatoes again, i feel there firmer. Without blanching. Just let them soak for 20 mins to get out starch, and rinsed, and put right in jar. There was no starch in jar after processing. I actially made stew tonight, used my potatoes, carrots, peas, celery i had canned, saving my jarred meat, and using up freezer meat for cooking and canning.. stew took no time! :)

If your potatoes have starch build up after canning them, make sure you strain them and save the starch water. My grandfather said the Reason being is that when you pour off the major part of the water from the bowl, you can dehydrate the accumulated starch at the bottom and create your own potato starch which can be used as a thickening agent. Never used this method as I learned to thicken with cornstarch but it's worth a try.

I toss them in oil then roll them in a seasoned flour (Kentucky Kernel brand is my favorite!) Bake at 375 for 20 min on a sheet pan - yum!

I canned potatoes (in quarts) for the first time this year. At the time, I had no idea what I was going to do with them, but I will say for anyone who is wondering the same, they have been so useful! I've put them in Japanese curry, made homefries, regular potato salad, and German potato salad so far!

We dump a few jars on a sheet pan, season and oil them and then roast them in a oven. They get a little crispy. We also make a chicken, bacon, ranch casserole with them and canned chicken.

I love to use canned potatoes for fried potatoes and for potato salad. I have learned that the best way to use them is to rinse them off, then I use paper towels and take off as much water out of them as you can. Then they fry up faster and brown nicer. Still have about 100 quarts to can. Using my own homegrown potatotes.

@@roxanne533 I like to use the paper towels to sort of squeeze out as much of the water out of the potatoes as I can without squishing them. To me it just makes them firmer. It's a texture thing with me. But when frying, the excess water makes browning them take longer. As you are steaming them first to get the water out before they will brown. I love to use my canned potatoes at breakfast. Also in my frittata too. Quicker than starting with raw potatoes.

We use our canned potatoes on the smoker. Rinse, oil, and season. Oh mercy, makes life worth living!

I can mine in chicken broth. In addition to soups and stews, drain a bit and pan fry for home fries. So good!

Excellent timing. I did some last week...didn't blanch first, but did add boiling water. I will blanch the rest when I do them. I had a problem with my green beans yesterday, posted on the facebook page, and got SO MANY HELPFUL ANSWERS AND SUGGESTIONS. What a great community to be part of. God Bless You ALL

I canned potatoes yesterday for the first time. I used those tiny yellow potatoes, some whole and some cut in half. I cut off spots or eyes on each. I didn’t peel them. I didn’t blanch them. I forgot to add salt. I canned in just water. They turned out very good (except they needed salt!)

I forgot that I already had 5 lbs in my pantry and picked up another 5lb bag Tuesday, so this was right on time. I'm going to do one bag in jars and one bag Provident Prepper style and dehydrate. Off to the kitchen I go!

When my air conditioning is on I put a towel over my bottles when they come out of the canner for a few hours to prevent temperature shock to the bottles

Leisa, my house is always on cool side and I had issues with siphoning till I started covering my jars with a tea towel after bringing out for overnight cool down. Also I let the jars stay on the canner with the lid cracked for about 10 minutes the open for about 5 more. It has helps

Potatoes were the first thing I ever pressure canned! I love my canned potatoes (drained) just sauteed in a skillet in butter with some fresh or dried herbs. Easy, quick, tasty.

If I am not mistaken; you only need to blanch chopped potatoes for 3 minutes and it’s the whole smaller potatoes that get blanched for 10 minutes.

I use a Rotato machine to peel my potatoes. My hands just can't take it. I'm canning potatoes this weekend and glad I found this older video or yours. So good to be able to go back and find this stuff. Thanks for the great videos! I'm definitely an ingredient canner too.

Thank you for your video. The potato harvest is happening soon. I try to get 75 lbs of potato dehydrated and didn't can any last year because my first attempt went solid. I'm "under the standing" that I used "starchy" potato and didn't soak them over night or blanch them and rinse. The things I learn, ... from mistakes eh? I will be giving this another try this fall, along with the dehydrating. I might even look for a different potato. I used russets last time. The french fry king. I want to try canning french fries of all things. Have a great one.

Yes, learn from your mistakes, and try again! Russets are not good potatoes for canning -- they're too starchy. In fact, any other types of starchy potatoes should also be avoided when pressure-canning (the All Blue potatoes will be similar; All Blues can be easily identified from other blue varieties by a pale ring in their purple flesh.) Use the white or yellow all purpose potatoes for pressure canning and you will have better success. Be sure to pre-soak and if you want clear water in your jars after canning, then blanche the cut potatoes before packing them into jars.

There are so many unapproved canning videos and recipes on the web. Before I use any of them, I always Google to see if they are from one of the canning books, the USDA, or one of the University extensions.

Found with white potatoes if you prep them the day before and leave them soaking in cold water alot of the starch comes out over night. So far ours havent lasted more then a month but we barley had any starch in the bottoms. No idea how theyd be longer then that xxxx

I just made these today even before I saw your video ... My recipe said to blanch cut ones for 2 min. My water level is down, I don't know if it was absorbed by the potatoes, of if it syphined off in the caner. The caner honestly didn't look like it had any potato water in it.

Awesome! I am totally going to try this. I have the same canner. Question just wondering I do r have the juggler. Just the weight. Can I purchase the juggler and just use that instead of using the gauge?

Presto makes an adjustable pressure regulator. The standard regulator that comes with dial gauge canners is 15 lbs. The adjustable one can be set for 5 lbs, 10 lbs or 15 lbs. I ordered mine directly from Presto. Now, I don't have to watch the dial or worry about the dial being accurate. Used to baby sit that dial watching the temperature, as it tended to creep up on my stove. With the adjustable gauge, as long as I'm within sight and sound of my canner, all is well. I recommend the adjustable regulator to everyone with a Presto canner that it fits. (It won't work with some vintage Presto canners, from what I understand.) Hope this helps.

I ran into a problem. I soaked my potatoes in fridge overnight , went to start the warming process and no propane.. So , I can bring to my sisters tomorrow after work to process but I have to work in the am and not sure how to store without water.. Its about 10 lbs or 12 pints worth. I thought maybe putting the broth in jars with potatoes tonight and then wiping down and cold start for process? Any thoughts?
