Jacques Pépin joined Googlers to discuss his latest (and 28th!) book, NEW COMPLETE TECHNIQUES, which was released on November 13th. Containing nearly 1000 cooking methods and recipes and more than 2000 step-by-step photos, this 700-page volume updates and expands the scope of JACQUES PEPIN'S COMPLETE TECHNIQUES (2001), the book that combined the legendary chef's landmark works, LA TECHNIQUE (1976) and LA METHODE (1979).
Jacques Pépin was born in Bourg-en-Bresse, near Lyon. Moving to the United States in 1959, Pépin first worked at New York's historic Le Pavillon restaurant and then served for ten years as director of research and new development for the Howard Johnson Company while attending Columbia University. A former columnist for the New York Times, Pépin is a contributing editor to Food & Wine magazine. He also participates regularly in that magazine's Food & Wine Classic in Aspen as well as at other culinary festivals and fund-raising events worldwide. He is a popular guest on top-rated television programs including Today, Good Morning America, and The Late Show with David Letterman.

Having been a chef for 35 years i can tell you it does not get any better than Jacques. Not only does he know the proper technique, and thats all cooking really is, he represents a way of how it used to be. In this day of shows having people standing on a tight rope while making rainbow trout sorbet, he knows what food is all about. Not fads but tradition. Food is about camaraderie, friends, and family enjoying each others company. Slow down and enjoy life Go Jacques!!!

Even if you don't cook, this interview is just plain fun to watch. His life has been so involved in learning, doing and teaching. He's a beautiful human being.

I just watched for the first time and had to stop to comment about how funny he was explaining about filming his shows on a time restraint and the guy with a sign with time remaining and Jacques trying to look so suave while filming and Julia taking all the time she wanted so funny.

Jacques is a true chef, a master and a true gentleman. So humble and classy. He is a true inspiration for me. My dad's name is jacques and is french like him and they both sound exactly the same when they speak English. To me listening to him is so comforting. Merci Jacques!!

I think one of the best compliments you could probably give Jacques is that he totally inspires you to cook honest food, have a good glass of wine and to do it for all the right reasons. No other show or person inspires in that way and to that extent and in a more natural way. Can't say enough.

What a fascinating man, with an extraordinary life's story. This is really an interviewer's dream, just a few words here and there, and let him just go. I really enjoyed this.

I have always just loved this man. His simple passions and the expression of his love is so pure. In his Apprentice book he offers a deeper glimpse of his early life and so many subtleties that I’ve noticed in his cooking made much more sense to me. What a beautiful life.

After 30 years of being an (extremely amateur) cook, Pepin is by far my favourite cooking inspiration. To add to that, his pure knowledge on everything he does, it's just outrageous. My favourite French person ever.

Jacques can take the simplest items and make simply delicious food from of them. It seems that he has learned this from his mother, who during WWII found so many amazing and creative meals from what others would never have considered edible.

Thank you, M. Pépin. I loved the stories, especially that last one. I had zero knowledge of what apprenticeship was like for you, and wasn't even aware that any teaching differences (in apprenticeship) existed. It was a pleasure to listen to your stories about Julia Child and about your daughter, Claudine. I watch the videos of More Fast Food My Way here on KZfaq, and have learned a lot. Now I know what to do with leeks and endives! :) I hope you'll be with us for a long, long time. You are a wealth of insight and wisdom when it comes to food and all that it encompasses. One of the best things for any interviewer, is Chef Pepín talks. But you better be on your toes and not ask the question he just answered.

The most influential people for my generation were Julia Child, Jacque Pepin, & Martin Yan. The cuisines left out were Scandinavian, British, & Middle Eastern. You all have improved American Cuisine immensely.

I wish Jacques could do a show on very simple cooking. He could focus on saving money and wasting less. I know he could do this. I don't want truffles I want a good simple chicken or steak, on the cheap. Maybe making meals for a week and purchasing bulk ingredients and not wasting food. Come on restaurants do this all the time. Please do this, nobody else will.

Get this book! It's basically the Periodic Table of Cooking. With the techniques in the book, you can make anything imaginable.

Jacques makes todays so called "chefs" like Gordon Ramsay, Guy Fieri, Bobby Flay, Rachel Ray, etc. look like ordinary fast food cooks. Jacques is a master chef. These other clowns could not even make a proper poached egg correctly.

You are right except for Gordon Ramsay. Ramsay is a classically trained chef who earned multiple michelin stars. His technique is top notch. I personally like Pepin better but Ramsay is not in the same league as Fieri or Racheal Ray.
