About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZfaq channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZfaq videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

I tried this recipe and it is amazing. I added some veggies into the mix and I didn't have any chillies so I improvised with some siracha. Sorry if that ruined the traditional recipe but it was so delicious.

I have made this tamarind and oranges sauces mixing for prawns and chickens and well. With touching extra virgin oil and spring onions... I can tell you it tastes like heaven

In southeast Asian cuisine, tamarind sauce is featured in dishes such as Pad Thai and Tamarind shrimp. The sauce is sold in bottles, like ketchup. It has a nice tangy sour flavor. Combining that with a reasonable amount of sugar and stock makes it irresistible. I tried it today on pan-fried pork chops, portobello mushrooms, and onions. It worked!

Thank you for your informative videos. I was extremely delighted to stumble across youtube channel and (subsequently) your website. My husband and I spent our honeymoon in Phuket, Thailand and we absolutely fell in love with the food. Ever since we got back we consistently try different thai restaurants here in Ottawa in pursuit of the same delicious meals we experienced in Thailand. Unfortunately, nothing here tastes as good as the authentic Thai food we had. But we have had some luck with the tom yum soups. Thank you again for creating these videos and allowing us the opportunity to learn how to cook Thai food with authentic recipes. :D

Made this for dinner today! Gosh the sauce! Absolutely love it! I made a kid friendly version..Replaced chilli with capsicums instead. The sauce goes yummilicious with soba!

Hey, Pai. I used to cook this dish. My mum's recipe. Only I don't use shrimps. I fried some fish yellowstripe scad and add it to the tamarind sauce. Sometimes I used dried salted fish. YUMS!

OMG.....Just took my last bite of the "Tamarind Shrimp" and it was absolutely mind blowingly delicious!!! The fresh cilantro and the shallots were the whipped cream and cherry on the Sundae. Thanks for this awesome recipe.

This recipe is excellent. I made it exactly as shown, with all listed ingredients. In fact, the only thing I had to buy was the shrimp. I used Thai bird chilis in the paste mixture, upping the number to 4, and the heat level was just right. Not too much, not painful, but a nice, steady heat that accented the dish perfectly. I will so be making this again. Thank you, Pailin, for another burst of inspiration!

I had this delicious dish a couple years ago in Thailand during a 3-day trip to Ko Sichang. During the meal the chef saw me peeling the shrimp. He came over to explain that peeling was unnecessary because they were fried and were edible. He was right and it added a nice crunchiness.

is cooking with tamarind like cooking with tomatoes or other acidic foods? I mean, can you cook with it in a cast iron skillet or just something non-reactive like stainless steel?

I love this with less sauce and thicker and more syrupy. And I like it better if shrimps coated with potato or corn starch deep fried in oil.

Thanks....Pailin!!! I have tried this dish today and it was awesome in taste but instead of palm sugar I used brown sugar. Do you have any recipe in Fish like this easy as this because here in Pakistan is hard to find Thai ingredients such as cilantro Shoots , etc. But still I manage with other ingredients in replacement and some how I make it better

If you cant find tamarind paste. You can soak tamarind in warm water, squeez it a lil with your hands. That's what me and my mom do to get tamarine paste. Oh and not to much water. Just to moise the tamarind up but not like soup. My mom sometime puts the tamarind meat in some dish too. And take it out before serving! Always good results!
