Though I call this mayonnaise, it is a tasty sauce to spoon on tacos, nourish bowls, bean and veggie soups, and anything on which you want a cool, creamy citrusy tang. The creaminess comes from silken tofu and cashew nuts, and so we’re also getting healthy fats, fiber, and protein.

Nan next time you make the mayo try pulverizing the nuts first by themselves in your little food processor then add the other ingredients. The soft ingredients make the nuts slippery but by themselves the processor can break them down easier.

I just found your channel and I’d love to say thank you. My family and I are plant based. I got out of touch with being more healthy but I’m changing this for good. My kids are almost 7,3 and 12months. I’ve started making my own breads and salad dressings. We love Mayo but from the store so I was searching up how to make our own, so thank you for this recipe!

I actually made a version with this silken tofu without any nuts or beans, and it turned out, wonderfully just the way she made it, but without the cashews. 😊

Good point Venus. If I didn’t color it I would indeed be grey. Some day, but I’m not ready. I use Madison Reed. It is the cleanest that I found and it is a good product. Madison-reed.com🌻😊🌻

Hi! I’m not sure, I’m not familiar with it. Do you have an equivalence guide? I’ve used JOI cashew paste and it works well.

@@NanSimonsenmy food processor wouldn’t get the nuts smooth enough. I cheat and just buy cashew butter. It seems expensive, but it lasts ages and a tub goes a long long long way. Great thickener for curries and other sauces too.

@@kiwifeijoa Thank you. It’s nice to know it’s possible, but I don’t own a blender, just a food processor and a spice mill. The cupboards in my kitchen are now full of ingredients for Italian, Persian, Lebanese, Thai cooking and regular bread making, so I don’t have room for many gadgets. I got rid of the blender, the sandwich toaster and pasta machine 10 years ago.

Back to the cashew powder, as with the popular powdered peanuts, they’re simply lower fat, and can be reconstituted with water. I’m just guessing here, but if you create a paste, that’s the equivalent to the volume of the cashews, it may not have the same mouth filled, because the fat will be less,but it should work. Keep us informed Wynona, and anyone that tries it. With the cashew paste because it’s basically a cashew butter I created an equivalency by matching calories if that makes sense; I.e. The calories of the quantity of cashews called for, matching the calories of the cashew cream. The cashew cream is certainly a way to guarantee smoothness.

Hi Stan! Yes, she was a terrific chef. Using real ingredients is much better than processed. But whole foods that are plant based are a game changer. Speaking of which, may I suggest that you watch The Game Changers. Super informative. 🌻🥰🌻
