Tawa Pasanday
Serves 4-5
Recipe in English:
Ingredients:
-Sarson ka tel (Mustard oil) 2-3 tbs
-Pyaz (Onion) sliced 2 medium
-Dahi (Yogurt) 1 Cup
-Beef undercut ½ kg
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Kashkhash (Poppy seeds) powder 1 tbs
-Dhania powder (Coriander powder) ½ tbs
-Zeera powder (Cumin powder) ½ tsp
-Haldee powder (Turmeric powder) 1/4 tsp
-Garam masala powder 1/4 tsp
-Namak (Salt) 1 tsp or to taste
-Chanay ka powder (Chickpea powder) roasted 2 tbs
-Kacha papita (Raw papaya) paste ½ tbs
-Sarson ka tel (Mustard oil) 1/4 Cup
-Koyla (Charcoal) for smoke
Directions:
-In frying pan,add mustard oil and bring it to smoke.
-Add onion and fry until light golden.
-Let it cool down.
-In chopper,add fried onion,yogurt,chop well & set aside.
-Cut beef undercut into pieces and hammer with the help of kitchen hammer.
-In bowl,add beef pasanday,ginger garlic paste,red chilli powder,poppy seeds powder,coriander powder,cumin powder,turmeric powder,garam masala powder,salt,chickpeas powder,raw papaya paste and mix well.
-Now add onion+yogurt paste,mix well and marinate for 2-3 hours.
-On griddle,add mustard oil and let it smoke and fry marinated beef pasanday on medium until done (6-8 minutes each side & cover in between).
-Give a charcoal smoke for 2 minutes & serve!

-Frying pan mein sarson ka tel dal ker smoke anay tak garam ker lein.
-Pyaz dal ker light golden hunay tak fry ker lein.
-Thanda ker lein.
-Chopper mein fried pyaz aur dahi dal ker ache tarhan chop ker lein & side per rakh dein.
-Beef undercut ko pieces mein cut ker lein aur kitchen hammer ki madad sa hammer ker lein.
-Boel mein beef pasanday,adrak lehsan paste,lal mirch powder,kashkhash powder,dhania powder,zeera powder,haldee powder,garam masala powder,namak,chanay ka powder aur kacha papita paste dal ker ache tarhan mix ker lein.
-Ab pyaz+dahi paste dal ker ache tarhan mix karein aur 2-3 hours kliya marinate ker lein.
-Tawa per sarson ka tel dal ker smoke anay tak garam karein aur marinated beef pasaday ko darmiyani ancch gul janay rak paka lein (6-8 minutes each side & cover in between).
-2 minutes kliya koyla ka dhuwan dein & serve karein!
