In your experience how much weight would you gain if you went straight into a 500 surplus before it would level out and become your maintenance

Quite a lot, would take a fair bit of weight gain for your maintenance to increase by 500 cals

I've been walking 12-15 miles a day and maintaining at 3000 for the last 7 months. I've dropped it down to 5miles on training days and 8 on rest. Dropped my cals to 2500 and I've started losing weight. I assume that's just water weight though, only 4 days in. My aim is to get back to 3000 calories at my new activity level. I'm 145lbs now I'm hoping I can do it before I reach 178lbs. Because that's the top of a normal bmi for my hight. I know Bmi means nothing, But it would be nice to stay in range. @@seanfitzness

I did 5x5 77,5 kg on incline barbell Last week with ease and today i Struggled to do 5 reps with 80kg. Totally frustrating 80 kg seems like a magic wall what could be the reason for this?

Been there man. Its either you're not gaining weight, you've milked out the noobie gains of 5x5 + 2,5kg or you need a deload. I would suggest switching from incline barbell to like dumbells for a while and then coming back to it.
