Biche c'est la meilleure, voir Agria pour la pomme de terre, mon mélange huile Pépin de raisin 60%, arachide 40% ( si vous n'êtes pas allergique) ou graisse de bœuf au choix, le résultat est sensiblement le même pour la couleur et le croustillant, seul le goût change. En Bretagne nous avons aussi du saindoux, perso j'ai testé à 175°C max, ça marche, la encore le goût est particulier, mais ça se tente en ce moment de pénurie.
