To prepare the right dough for dumplings:
***** Glass 200 ml
***** All ingredients at room temperature (water and milk can be warmed up slightly)
Flour - 2.5 - 3 cups with a volume of 200 ml
Egg - 1 pc.
Vegetable oil - 1 tsp
Water - 1/3 cup
Milk - 1/3 cup (you can use only water, then 2/3 cup water)
Salt - 1 tsp without a slide
Filling for dumplings
• Minced meat - 400 g (you can add lard if desired, if the meat is lean)
• Very cold water - 50-70 g
• Onion - 150 g
• Salt - 0.5 tsp.
• Black pepper - to taste
1. Sift flour into a bowl. In a glass, mix the egg, water, milk (milk can be replaced with water), vegetable oil and salt. Pour the liquid into the flour, knead a slightly tight dough. If necessary, add a little water if the dough is too tight, or flour if the dough is too soft. Place the dough in cling film and let it rest for 30 minutes.
2. Prepare the filling, grind the meat, onions. Salt, pepper and add water. Mix well.
3. Cut off part of the dough, roll it into a rope with a diameter of about 2 cm, cut into small pieces. Roll out each piece into a small cake. Put in the center 1 tsp. minced meat, form a dumpling.
4. Dumplings can be frozen for future use. To do this, wrap the board with cling film, sprinkle with flour, lay out the finished dumplings. Put the board in the freezer for 1 hour. Transfer frozen dumplings to storage bags.
5. To prepare dumplings, boil water, salt, add bay leaf, black peppercorns and onion. After the dumplings have surfaced, boil them for 3-7 minutes, depending on the size. Serve with butter.
