The servers probably have had more than their fair share of being yelled at by customers about the crap food, and having to take it all with a smile, while the chefs can act tough inside the kitchen whenever complaints are relayed to them.

The management has a bit of idea that the restaurant is shit but they deny it. On the other hand, servers experience how shit the restaurant is first hand through the customer's complaints. Like my father said who worked as a server when he was young, "The wait staff knows the dirtiest secrets in the restaurant because they experience it and they roam around."
