White Clover Jelly recipe:
2 cups White Clover infusion (tea): steep 3+ cups packed flowers in 2 cups boiling water. In a sauce pan.Turn off the heat and let it sit for at least 2 hours.
1/4 cup lemon juice
4 cups sugar
1 box of Pectin
UPDATE at 3am: I will say, after allowing my jelly to cool, it is a much looser consistency than your standard "jelly". Not quite syrup, but a very loose jelly. I would probably add another box of pectin if you want a thicker consistency, although I have to be honest and say, I like the looser set on this, because I plan to use this on homemade buttermilk biscuits. :D I But I wanted to throw that out there to you guys..... as a little update on how it turned out. Altho to my understanding, using tea infusions do set up looser than your standard jelly.... I know my dandelion jelly is also more on the loose side, altho thicker than the clover. Maybe I should make a video on this? hahaha My husband absolutely LOVES it!!!! Add less lemon if you dont want it to tart.... or keep it plain..... but this stuff is dang good! :D

Ha! I have a whole stash of white clover right now on my counter that my kids picked me for flowers! I was going to throw them out when they weren’t looking, now I’ll send them out for more!!!

Somehow I missed this video before. I'm so glad it popped up. Daddy has white clover growing in his yard. I'm going to tell him tomorrow that I can make him some White Clover Jelly with it. He will get a kick out of that. :-)

I let mine sit for 5 min as well after turning off the heat. It is easier to get the jars out when you don’t have a boiling pot to deal with, and it helps to acclimate the jars a bit before you pull them out into the different temperature air so they don’t break. I usually broke 1 or 2 jars every season just pulling them straight out of a rolling boil, and since being told to wait, I haven’t lost a jar yet. Then when I put my next set of jars in, the slightly reduced heat is perfect to acclimatize the jars before getting back to a full boil, especially if I’m cold packing.

I used to make dandelion honey (jelly) with my kids when they were little. My mother-in-law showed me how as she ate it when she was growing up back in the 1940s-50s. Delicious. I will definitely try this with my grandkids!

I love canning thanks to your channel. I would do more if I could afford lots of ball mason jars. I cant get a pressure canner here in England for under £300 as they are sent from USA. Its limiting but meanwhile I'm water bathing everything I can! 😂😂😂😂

I make this every year. I've never known anyone else who makes it!!!!! Yay! To me it tastes just like clover honey with a light hint of cinnamon. Superfood.

Heather you make this look so easy, and that is why I love your videos, because you explain it so even a newbie like me can understand. I am a lot like you. I learn more visually than by book or by just someone explaining it to me. Now as for trying this one, yes we have some clover in the area, but we also have a lot of dogs. WOOHOO! Report Back!!!! LOL add more pectin if you want it set thicker..... mine came out more on the softer set, but i love it because it is thick enuf for biscuits yet not as thick as knifing on a jelly spread!

Thank you so much for this editorial on how to jam clover but unfortunately I only had old pectin so I used two boxes and I have the wrong size jars so I wound up making only three and the rest I just put in the refrigerator to put in my iced tea. I think it would taste really good that way.THANK YOU❤😁❤😁❤

We usually simmer on stove for 10 minutes, then after ut cools we put in refrigerator for 24 hours. Dandylion is still my favorite here at home. Rose honey, I've added hibiscus ginger loose leaf tea...the roses were just too mild. I always taste the product before soaking overnight. We reserve one cup of sugar and wisk in the pectin to incorporate it into the sugar. Makes adding the pectin and mixing it so much easier into the hot pot. A pat of butter too, then no froth. A dash of vanilla. I just squeeze 1/2 a lemon, so I don't think that would be 1/4c

Heather, I made Constant Comment tea jelly using this steeping method and it is amazing! Have you ever drank Constant Comment tea? It is my favorite and I thought the jelly would be good, too. It is! I used 10 tea bags and let it steep in 4 cups of water for 20 minutes.

I am glad you shared this I am new to canning but i did a red pepper jelly that is to die for and a couple others my blueberry never got think was lose.I use clover as i am a herbalist and i make tintcures and salves and pillows and soap as i am a prepper and i coupon shop to get things for free so I dont have to pay out of pocket when i saw this i was now i am making

Heather... have you ever used the dark red/burgundy clover? There is a huge bath near my home and wondered if it would be used. Keep up the good work. I made this last year when I ran across it...and it was wonderful, tasted just like honey to me.

Really enjoy your videos! One suggestion I have is: when you're waterbath canning a small batch, place an empty jar in your canner so your jars don;t fall over. For the pressure canner you can process a jar of water for your storage if you have an extra space!

It looks like this recipe is VERY similar to the dandelion jelly I made. Is it true that all the jellies are made the same way just using the flower of your choice? Thank you for any replies.

Heather, my aunt has crimson clover in her yard. It is such a beautiful shade of red--almost has a purple tint to it. She bought some red clover (nitro-coated) seed a few years back and her back yard is really pretty. Can I use the crimson clover for this jelly? Do you think the flavor will be different? Should I just find someone who has the white clover? Most of us (in my family) live in neighborhoods that have the HOA's and their rules for lawns are basically to keep our lawns green and clover-free. I really want to try this and give as Christmas gifts this year. I usually make something to give to all the neighbors on my block (approximately 15 homes on my street) and I my Christmas budget this year, for obvious reasons, is quite a bit less than most years. This seems like it will be perfect for my budget and sounds delicious--so no one will think I was being cheap this year. Any thoughts or tips you can share for making this is greatly appreciated, thx :)

I don't use the water bath because if you turn the jars upside down for 5mins. and then turn them back over they seal every time and a lot quicker and easier.

Couple things to help out...you don’t have to put your bands in hot water and there’s really no need to do a water bath. Fill the hot jars ,put on lids and tighten bands and turn them upside down for 15 minutes then turn them right side up and let them sit until you hear them “ping” when they cool and seal. This will save a few steps. You can also just use a damp cloth to wipe the jar rims..no need to use vinegar.

Open kettle canning (which is what this method is) is not recommended and hasn't been for a long time. Do whatever you want in your kitchen, but please don't recommend unsafe methods to newcomers who may not know any better. If anyone wants to know why it's unsafe, Google it. There is no shortage of info.

Heather, do you do the dandelion jelly the same as the clover? I love watching your canning videos, you make it seem we are right there with you. I appreciate the long videos, tha t.f way we see exactly how the process works. People who complain aren't forced to watch!! Thank you for your efforts!! I want to get back to canning. I so enjoy it, but have been caring for my mom for the past 3 years. She's in heaven with daddy now so I'm going to try to start again. I've been gathering pint jars for jelly. Have you ever done rose petal jam? It was a favorite of my dad's so I did for him.

Don't worry about the amount of sugar... they add a ton more of the stuff to pretty much all processed foods. Traditional cooking like this is much healthier, after all it's not like your going to be dumping whole jars of this jelly into each and every meal you serve.

1 TSP of liquid stevia per 1 C sugar IF YOU don't want to use sugar. or 2/3 cup honey instead of 1 cup of Sugar conversion.

Hey Star! This canner in this video is just a basic water bath canner..... they sell them for $20 at Walmart. AND pot with a lid that is deep, like a big stock pot, can be used to water bath can jelly. You dont need anything special. This one is nice because of the BIG size. I also use an All American 921 model Pressure Canner and I absolutely LOVE it! The pressure canner can double for both pressure canning and water bath canning, so keep that in mind. You dont need 2 like I have. :D
