Real old fashioned skills on display , love Tom kitchins cooking style very classical , if you can't actually cook you'll get found out .. give this man a knife a pan and a flame he'll still produce world class food doesn't need any gadgets , huge respect

Finally, a good old fashioned recipe that looks like real food and makes my mouth water. I like how modern cuisine looks, but sometimes, it's just too plastic and manufactured to get my saliva glands going.

Probably the first ever Michelin dish i've seen that i think would actually fill me up. That bit of lamb looked very, very good !

Incredible to watch! Just one question, at 2.00 in when the camera cuts away on the 'tricky bit', is he completely removing the fat layer he starts cutting into? And then flattening out what fats left over? The fat seems pretty flat before he starts using the back of the knife or has he already battened it out quite a bit? Thanks in advance!

cook it slowly at about 58 or 60 degrees for about 30-45 minutes, then sautate it lightly in some beurre noisette. I can guarantee you it'll be juicy, tender, and so full of flavor.

It's all about passion. It's really hard though, man. Even if you graduate from culinary school you'll be lucky to get paid 12 dollars an hour in the states.

so many rules. Look at the base of the plate. A moist "farce" as he calls it, and a puree. I would say that is enough moisture for the dish, also the saddle would be cooked to retain its juices, especially the rendered fat for added moisture

Dinner at Kitchins was a wonderful thank you gift to a good friend. The food, decor & waitstaff were the best, however maitre de made a snide comment about Americans. It felt as though American is a contagious disease, not well received, not at all.

Use a spiral slicer for the potato to make it into thin strips, and then wrap it around a round mould and deep fry.

you can't serve lamb saddle without the gravy because is a type of dry meat , the only part of the meat which you serve'it without jus is lamb neck , lamb shanks ,lamb rack , cutlet, because these parts they are juicy ... any way thanks for the presentation look great .
