You know there is a way to get flour in there without lumps. (If you don't have cornstarch. ) You just work your flour into the butter real his. Until it's smooth. Then just cook it a little while after you put it in the pot so it's not gonna taste raw.

I use red potaoes also and you really dont need to peel red potatoes or new potatoes because their skins are so thin and have no flavor but have all the nutrients in them. You wont even notice the skins if you dont peel them. We put fresh green beans in our creamed new potatoes dish.
