This delicious corn ribs recipe emulates the flavors of elotes with mayonnaise, spices, cojita cheese and cilantro.

Ingredients
Servings: 6
2 ears of fresh corn
2 tbsp avocado or canola oil
½ lime, juiced
1 tsp garlic powder
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp onion powder
2 tbsp mayonnaise
1/4 cup(s) grated cojita cheese
2 tsp Tajin
1/4 cup(s) finely chopped cilantro
Lime wedges, to serve
Directions 9 steps | 25 Minutes
Step 1
First, bring a pot of water to a boil and prepare the corn ribs. Shuck and clean the ears of corn and then place the ears of corn in the boiling water. Boil the corn for about 10 minutes and then remove the corn from the water.
Step 2
Once the corn has cooled and is cool enough to handle, cut off a thin slice of the thick stem end of the corn. Do this to create a flat surface for the corn to stand.
Step 3
While wearing a Kevlar or kitchen glove on your non-dominant hand, stand the corn up on its stem end and place a very sharp knife horizontally on the corn. Then place your gloved non-dominant hand on the opposite side of the knife and use a “see-saw” motion, rocking back and forth to cut the corn in half.
Step 4
Next, stand one of the corn halves on its stem and use the same “see-saw” motion to the cut corn into quarters. Repeat this step with the other half of the corn.
Step 5
Then in a large bowl, whisk together the lime juice, garlic powder, chili powder, smoked paprika and onion powder. This will help us emulate the flavors of authentic Mexican-style elotes.
Step 6
Add the cut corn into the bowl and toss to coat evenly. Take extra care to get good coverage of the seasoning on the kernels. We want the corn ribs to have a thorough, even coating.
Step 7
Preheat the air fryer to 400°F and add the elotes-style corn ribs in a single layer to the air fryer basket, taking care not to overlap the corn ribs. You may have to do this process in batches depending on the size of the air fryer basket. Air fry the corn ribs for about 8 minutes or until the corn is tender.
Step 8
Remove the corn ribs and use a basting or silicone brush to slather the kernel side of the corn with mayonnaise.
Step 9
Lastly, sprinkle on the cojita cheese, Taijin and cilantro on top of the corn ribs. Serve with lime wedges and enjoy!

No, you should not consume the cob even though the seasoning is super tasty! You can enjoy corn ribs the same way you would enjoy corn on the cob by just nibbling the kernels :)
