In this ep, Molly is joined by her good friend Tobias who has never broken down or roasted a turkey on his own. Molly demonstrates a method of cooking that ensures both juicy breast meat, and tender leg meat, and nothing less!! The solution? Break the turkey down BEFORE you cook it, instead of after. If you’ve ever had Chicken Marbella, you’re in for a realllllll treat with this one. Dates, sherry vinegar, olives and white wine and couscous all join the party for the ultimate Thanksgiving main. Ingredients :
PRODUCE
2 heads garlic
1 ¼ pounds medium shallots
8 large sprigs thyme
PANTRY
½ cup plus 1 tablespoon kosher salt
¼ cup brown sugar
freshly ground black pepper
6 ounces medjool dates, (10 dates)
⅔ cup olive oil
1 ½ cup sherry vinegar
1 750 ml bottle dry white wine
1½ teaspoon red pepper flakes
10 ounces pitted castelvetrano olives
2 ½ cups Israeli couscous or fregola
PROTEIN
1 whole turkey (14-16 pounds)

I’ve been making the original Chicken Marbella from the Silver Palate Cookbook by Julee Rosso & Sheila Lukins for about 25 years and never once thought of giving that treatment to a turkey…transformational!🎉 It just so happened that I had a turkey from the pre-Covid era (freezer diving) thawing in the fridge and thought, what do I have to loose? Zero! All gains. All these years and I’ve been like a crazy person meticulously peeling and puréeing garlic - “F” that. From now on we’re one cut across the equator and tossing ‘em in. The end result was a bronze gobbler that has never been more flavourful. Mind blown! There’s a few minor adjustments that I’ll make for the next time that come down to personal preferences and finagling with my ovens temperature, but other than that a winner, winner, turkey Marbella dinner. Thanks Molly for this video and breaking down the mental road block I had with regards to sticking strictly to this classic. I’m going to implement this thinking with more recipes going forward. Molly thank you so much!! I made this yesterday and got compliments from everyone! Multiple people told me it was the best turkey they've ever had! And I'm not a person who cooks.

I've been making Chicken Marbella and "Wings" Marbella since my worn out and stained Silver Palate Cookbook was practically brand new...it's a family favorite recipe. Leave it to you to do it with Turkey...it looks amazing. Thanks for the idea Molly and it's so good to have you back!

Made this in 2022, and my friend gave me a turkey in January 2024 to make it again. It’s the only way to have turkey.

What a great idea, love chicken marbella, and definitely will try it with turkey. When you were going through what would be needed in the beginning, I had a major WTF moment when I thought you said "goose poop"! Had to go back and hear it again, ahhhh cous cous 😂! Just a little tip to anyone who wants to have a go at breaking down a turkey but has never done it before. Buy yourself a chicken and practice on that first. Its so much easier due to being smaller and lighter but has the same anatomy as a Turkey just on a smaller scale. That way you can learn how to butcher a bird, what to look for how to hold it and where to cut before you go anywhere near your huge expensive Turkey that you want to look amazing for Christmas or Thanksgiving. Dont worry it wont be wasted - you can try it in advance eat some that week freeze the cuts you dont use immediatly for later use AND even better roast off the carcass of the chicken makes some stock and freeze that and you have some ready in advance for your gravy for the big day or just to use from things like Rissoto. Not only that but normally buying a full bird is a lot cheaper than just buying a load of breasts/wings/crown etc already done so you save money while learning a new skill that you can use on any other bird get loads more meat for the same price and the option for homemade stock/schmultz (rendered down chicken fat - great for adding flavour!!) First time you do it its going to take you a little while but dont worry - the more you do it the more confidence you get and you will soon be breaking down a chicken/turkey in less than 5 minutes. Give yourselves a break try it on a chicken in advance save the holiday stress for something else and enjoy :)

Making this as we speak, make sure to temp your turkey often as we're finding the timings are off for our oven. Might have to drop the temp on the white meat cook halfway though to not dry things out.

Marbella is usually made without cous cous, I think. And it’s usually made with chicken. But of course Turkey is okay. People use the cooked juices like gravy.

According to the Centers for Disease Control and Prevention (CDC), you don’t need to wash your chicken. In fact, the CDC advises against washing raw meat, chicken, turkey and eggs because this can spread germs to your sink, countertops and other surfaces. Those germs could then get on other foods you’re preparing and make you sick.

That seems like a lot of fat for the couscous… half a cup of olive oil plus all the fat from the turkey. It’d give you the runs.

Couscous? Welcome to LA. That roasting pan is bigger then my apartment, let alone my stove. But no shaking video or three camera jumps or moldy dairy products, so that is a plus. Who has room in the oven for this? What about stuffing? Is this what Thanksgiving looks like in LA? Couscous? BTW nice tan. Do not worry I still ¨liked¨ it and will follow. Who is Tobias? Where is Tuna? And the potty mouth and F bombs? But all in all good recipe, we all should know that thighs take longer to cook. that is what the bacon wrap, butter soaked cheese cloth, butter under the skin......remember the plastic bags? Oh God, Midwestern cooking is so difficult.
