Tuscan Chicken Soup - my first Instant Pot original recipe! Thank you for joining me as I share this really simple, delicious, and incredibly nutritious chicken soup. With an abundance of vegetables, a fresh tomato base, garlic and herbs, this dish takes me to a place I've never been but would imagine has the warmth and vibrancy that this soup offers. I love that the Instant Pot allows me to have fall-off-the-bone tender chicken in around half an hour (plus pressure-building time). Once the lid is on, I can walk away and not have to watch for anything boiling over on the stove. This is very convenient as I get through the other tasks that large family life demands!
I have the 8-Quart (8 litre) Instant Pot, which I believe is as big as I could get one here in Australia. I would love to find one larger (I hear Jamerrrill Stewart mention her 10 Quart Instant Pot and thought, "Hello!". So, for the 8-quart, I do tend to fill it pretty high. If you have a smaller family, you won't have to worry so much about fitting enough - but regardless, I do love to amke a huge batch so that I can eat this Tuscan Chicken Soup for lunch over many days. Even better - this soup has a maximum of 3 WW points per bowl, meaning i can enjoy it till my hearts content and it is only doing good!
Yes, I forgot to add chicken stock (who else forgets their own recipes?). I would suggest that, depending on how much soup you are making, you add 2-4 cups of chicken stock. You can use cubes or powder and then add more or less water, depending on your desired consistency - but I like this soup THICK, and that appears to be a Tuscan thing, too!
Recipe (to make a 10 Quart Instant Pot amount (that I seem to pack into an 8 Quart, but I don't recommend this!).
12 Chicken thigh cutlets (the bones add flavour and nutrition
half a bunch of celery (around 8 stalks, including leaves), diced
5 carrots
5 bell peppers/capsicums, diced
1-3 zucchini, diced
entire bulb of garlic, finely diced
1-3 teaspoons chilli paste
1-2 teaspoons ginger paste
2 Tablespoons Tuscan seasoning (or a mixture of hers, such as rosemary, thyme, parsley, and a teaspoon of salt). Fresh herbs can be used instead of dry, if you like.
2-4 chicken stock cubes, and as much or as little water as you like, depending on your desired soup consistency.
Add ingredients to your Instant Pot in the above order, and set Instant Pot to 'Stew'. Incidentally, if you refrain from adding any extra water, this is a very thick soup, and can be enjoyed with rice, pasta, or equivalent, as a hearty Tuscan Chicken Stew!
