This video is the exact reason I bought my Oklahoma joes highland, I saw potential in the versatility of using this pit, this is the first video I’ve found using the main smoke chamber as a direct grilling application. @@meatcranium4280 Hi there. Just got a OKJ highland myself and I'm fairly new to smoking. I stumbled upon your previous video with the baffle/tuning plates hack. And i tried it and it does take the heat to the middle of my smoker however the end part isn't getting heat. So i had a question. Do you know if lava rocks will work for smoking? Like if i put some lava rocks at the end of the smoker?

There is a lot of silliness in this video. First of all lava rocks do not retain heat at all. It can absorb heat but it would offload that heat much faster than granite rocks or hard stones. The other thing is you've turned the offset smoker into a charcoal grill. not saying it's a bad thing but it's silly to have a video explaining Oklahoma Joe offset smoker modifications where all you did was turn it into a charcoal grill using a very poor insulating rock

I like it . I have the same smoker and I live it . I never thought about using the lava rock to contain and retain the heat from the charcoal. Thanks Tim True

good stuff...I just got my OK Joe HS and I will smoke some but will probably grill more with the larger sq ft of space I have. This is a great way to insulate also as well as tin foil pans. Thanks

I am so happy there is someone else out there that thinks outside of the box, well cooking chamber! I did exactly the same thing with my OHJ Highland here in the UK, though it never occurred to me to use sand on the bottom🙄 I've got people, in the UK, which is not massively into smoking or BBQing, telling me I've lost the plot! But both wood & coal are expensive so lava rock for slow & low, was in my opinion a no brainer and it cut my fuel bill by leaps and bounds over a long cook. Used in the fire box it just aids temperature control so allowing less of the expensive stuff to be burned! Well I think so! But maybe I'm just bonkers🤯

Not a bad idea, however, I use my smoker as a smoker, and my grill as a grill. Decent video though.. I like to keep it "on the cheap" as well. GJ sir

MeatHead Thanks for sharing, doesn't hurt to think out of the box at all I do it all the time lol. Never seen it done like that before looks like it should work just fine I've have seen others using firebricks and line the inside of the main chamber to help hold the heat better. I like it. One point about your description of the air flow channel over the sand. Heat rises. As soon as the hot smoke leaves the firebox and enters the smoker it goes straight up to the drum ceiling. After that it fills the ceiling all the way to the opposite wall. Then it banks down inside the smoker and all the hot smoke travels down across the entire drum (this banking down is called mushrooming). It banks all the way down until it reaches the exhaust tube. So any actual air/smoke movement travels along the ceiling and down the exhaust tube wall.

That's cool . I cook with split wood it would be nice to have the direct cooking as a option . I need more height for wood though . Thing is there's enough room to easily move back and forth from direct heat to offset . I'm not sure how the new grills will hold up being 2mm thick plus the enamel grates which I don't like much rather have the stainless ones like you have .

can you explain the purpose of the layer of sand......is it to make clean up easier, to protect the bottom of the barrel, retain heat........none or all of the above.....

Billy Markwell All of the above. That method brought the temps well 500 degrees, so the sand acted as an insulator

What is the reason for the sand? I’ve gone through your videos trying to find why you put it there but couldn’t find anything. Is it to protect the bottom of the cooking chamber or is it to help keep the heat in there??

I don’t get it. Why have a offset smoker if you’re using direct heat? Why not use a Weber Kettle or something of that fashion?

MeatHead He’s talking about the sand. Inhaling sand (silica) can lead to forms of cancer and other respiratory disorders like silicosis. Adding to the life of your smokeris great but I’d rethink the whole heating sand around your food. Especially if it’s packaged manufactured from some plant like Sakete.

Hey Meathead, I owe you an apology. I saw this video when you made it and though bumped you head. It seemed to work ok but it was out there. I have a OK. Joe also that is about 4 yrs old now and I don't use it much any more because I have 2 other propane smokers that I really like a lot. I have been thinking about what to do with it, it takes up a lot of room on the deck. I'm thinking about trying this. Thanks

You lost me at “lava rock retains heat”. Quite the opposite. Lava rock, being porous, retains very little heat. Its porosity is what allows “fire walkers” to step on it without burning their feet. Try ceramic briquettes for heat retention.

MeatHead I love your creativity here, don’t get me wrong. It’s just that stones that are more dense will be more effective. Even river rock. But you’re right that it’s a great way to extend the life of your Joe if you grill within the smoke chamber. Thank your dedication to the art! Kudos.
