I appreciate it though. I think Jimmy said himself, he's doing this cooking channel for fun. He's no chef and enjoys cooking. This isn't what pays his bills, so Uncle Roger came in who has millions of followers for critiquing food videos, granted he's funny too, but I bet it is a little intimidating. It's like a football star playing basketball with Steph Curry and he's critiquing your shot.

There's not that much to criticize about how Jimmy made his fried rice. Most Asians (incl. myself) are taught at least one way to make it growing up. Fried rice isn't tricky, and there is a lot of variation in techniques, so it's actually stunning to watch Jamie Oliver fuck it up so badly.

I actually find it refreshing as fuck to see Jimmy a little more nervous here than he usually is. He's so charming and funny, it always seemed like he was super put together and always charismatic 24/7 in his life. This isn't an insult. Jimmy seems like one of the bros here and I'm all for it. Like him more as a celebrity cos of it.

I will say Jimmy is mostly in acting mode. Jimmy is senior for Uncle Roger/Nigel Ng in stand up comedy. I think Nigel is pretty respect to Jimmy off the screen, but not in Uncle Roger mood.

I live in Asia, and tried out this recipe with what I had in the kitchen. Switched out the bacon with pork belly slices, and curry powder with pepper and five spice powder, peppers with fresh chilli. Wife liked it, she said it was a nice home-cooked meal. Props to you Jimmy.

The thing is, fried rice is a very flexible dish and there are many different ways to prepare it. I tried Jimmy's version and it turned out great, and I was just thanking him for it. I was deceived by the title: there was no roasting involved. But instead I got a very wholesome video. Was Jimmy actually nervous? I'd like to think so. For once I'd whitness a down to earth not cocky 'let me show you how this is done' guy. And uncle Roger was soo polite too. Huge fan of Uncle Roger and Jimmy - esp I'm from Hong Kong, great to see Jimmy as such a great representation of HK. One thing about the soy sauce though (as a home cook for > 10 years) - soy sauce has sugar in it so can be easily burnt, therefore you don't want very high heat on soy sauce. Burning soy sauce for too long will also make it turn slightly acidic, destroying the umami flavor in it.
