Next time, you can try palm oil instead of the canola oil. It gives a richness in the color. Also, a bit less water in the egusi mixture. The goal is to keep the “egusi balls” intact. Wonderful recipe execution.

Hi, i just discovered your channel. I love trying food from different cultures. The first African dish i tried was Mafe. I just googled vegan African and this recipe came up. Ok, you are stoopid funny in all the right ways! I laughed soooo manny times. I once dated this Nigerian & told him I wanted to learn how to make fufu so he had his mom teach me. After what seemed like eternity x5 of stirring, scraping, a dislocated elbow and sweating from every crevice, I was convinced she didn’t want me anywhere near her son! However, I broke up with him b/c he expected me to do this everyday like his mom. I ❤Nigerian men but if we can’t afford a dedicated fufu chef, I’ll have to pick another pan African man.😊

Ok this looks amazing! And girl I also started making more vegan African dishes let me tell you what to use instead of seaweed for crayfish taste IRU! DAWA DAWA! It’s fermented sesame seed and it has a fishhyyyyyy taste and pungent stinky odor but the flavor profile is immaculate! Trust me! Any seafood flavor you use this stuff changed the game for me! Most Nigerians cook with it anyways. It’s such a beautiful flavor on the tongue palet!

Hey Katie next time for your fufu as a vegan option you can use flour mixed with rice flour or you can just use all the rice flour. I forgot which country uses rice flour for their fufu but I found this option when I was searching since I don’t like cassava fufu or any of the other traditional plant fufu.

@@KatieMakesItVegan I think it is an acquired taste. I made Egusi yesterday and it was amazing. I used a blend of different mushroom. I made fufu as well but don’t like the texture of it so I served it with rice. It was so delicious. Thank you so much.♥️
