In this week's video, I show you how I make a vegan oil free pesto and three delicious meals suitable for weight loss: a pesto and salad sandwich, spicy vegetable rice with Mediterranean style white beans and broccoli, and pesto pasta with roasted tomato and rocket. These meals are low fat but will keep you full and satisfied as they are full of fibre and goodness.

Vegan oil free pesto:
100g basil
1 medium tomato
4 garlic cloves
1/2 cup toasted pine nuts
2 tbs lemon juice
Salt & pepper
Mediterranean style beans:
1 green pepper
1 onion
1 can of white beans
1 tbs tomato paste
2 bay leaves
1 tsp oregano
Parsley
Salt & pepper
Spicy vegetable rice:
1/2 red pepper
1/2 onion
1/2 tsp turmeric
1 tsp smoked paprika
All purpose seasoning or salt
Pepper
1/2 tsp chilli flakes
1 cup cooked brown rice
1/2 tsp curry powder
1/3 can of peas
