Helpful tip to succeed in making the mayo.
Vietnamese mayo is one of the important ingredients for banh mi.
This recipe is simple that you can do it at home and it is much tastier compared to store bought.
Ingredients: you can cut my recipe in half.
Hand mixer work great as well.
6 egg yokes
1/2salt
3 garlic cloves
1 cup vegetable oil (both avocado oil and olive oil (not extra virgin olive oil work too)

Thank you so much! Your tip to mix the yolks until they turn a bright milky yellow before adding the oil made all the difference! I used my immersion stick blender and it worked wonderfully!!

Thanks for watching! It does make a difference in my experience, u r right. It’s best to leave the egg in room temperature. I don’t have a hand mixer to do a small portion. I’m glad it worked out for you. :0)

Thank you for explaining it thoroughly. Tried it someone else's recipe & instructions & it was an epic fail. Good thing I only used 3 egg yolks.😂

The Vietnamese mayonnaise is actually an aïoli - also referred to as Le Beurre de Provence - hence the Vietnamese often refer to the mayonnaise as Bơ.

Easy. Just beware, not to use too strong flavoured olive oil!

is it possible without the mixer? can i just whisk it or is that not good enough

Hello, You can use a hand mixer, it’s better actually since you can make a smaller portion. Whisky by hand will take a longer time, yet I found a hand mixer or this mixer is easier to do.

I tried this and it just tasted like raw eggs, am I doing something wrong, the texture is there but the taste is weird

Hello Thao, Khi nao ban thay mau trung' vang duc, thi ban che dau vao tu tu. Trung nen de o ngoai vai phut truoc khi danh' neu ban o su' lanh. Doang 3:26 When the egg liquid looks like pale/milky yellow and the liquid thicken, add the oil slowly. check out part 3:26-3:28 Room temp eggs help.

Some like it more runny which requires more oil. The ratio on the recipe is what I enjoy. You can add less oil if you prefer. Thank you again for your feedbacks. Its good on baguette, but don't eat too much, though. :0)

Eggs are good for you, don’t believe the hype. Watch Dr. Berg. We make cholesterol. Eggs contain testosterone needed for men. Great for woman hormones, hair and bone as well. Society is trying to turn men into soy boys. The vegetable oil she uses is what should be avoided. It’s not a vegetable. It’s a highly processed seed oil that’s extremely inflammatory. Inflammation is the root to all diseases.
