The most expensive sushi I'll probably ever taste.
Ingredients
1 16-oz piece Wagyu
2 cups cooked Sushi Rice
1 medallion Foie Gras
2 tbsp Soy Sauce
2 tbsp Mirin
1. Cook sushi rice as usual. Any basic recipe is great.
2. Sear off small pieces of foie gras and set aside.
3. Thinly slice wagyu and immediately refrigerate or freeze the remainder for later use.
4. Shape your rice, and lay the foie gras followed by your wagyu atop. Torch this with a culinary torch.
5. Lightly paint each piece of sushi with an even mixture of soy sauce and mirin. Enjoy!

Tips from a sushi chef: We use an absolute different technique to shape it but it is hard to learn, you can perfectly do it like you did if you are not trying to be a pro. Anyways: -You use too much rice -A little bit overcooked -too much pressure (we are taught to never press the sushi with more strength than the one you would apply holding a little chicken -Cuts should be wider Everything else it is okay so far, good video and that cut of wagyu is absolutely stunning :)

As a cattle farm co owner myself. People don’t realize how hard it is to maintain those cattle at a certain weight to then turn around and make sure they have a good marble percent in that meat. It takes a lot of hard work and determination to make those cattle grow. Spending long hours of the night making sure a calf is going to make it is dedication. I love how Nick says how special that meat it. It’s a super special meat, and people work so hard at getting that animal to produce that meat.

You have to be careful about what you make your sushi with. I had a steer that was born at my house, ate like a king for a year, and was processed at 18 months. Even under great conditions his meat isn't the highest quality because he was half beefmaster, and those cattle tend to be a bit tougher and less marbled. He made some great roasts, but he could have been better. I wouldn't make sushi from him because I think I would be disappointed.

" Sustainable Responsible source " You do realize foie gras can only be produced by overfeeding the ducks right ? Im not complaining that youre using it . If i was too big of an activist , I wouldnt be non vegetarian . Im just pointing it out . As for the controversies, The way foie Gras is made is by shoving a tube down a ducks throat and overfeeding it till its liver swells up and expands. A lot of people think that this force feeding is torture . But that isnt the case , the ducks and other birds' bodies are made different from us humans .So even though that would be torture for us , it wont be torture for the birds . The torture , however is the discomfort of the overfeeding and swollen livers , and the injuries that take place during the process . The workers feeding these ducks couldnt care less about the ducks , its their everyday job watching them die .So , they arent always gentle and many times end up injuring ducks in the process by breaking the beaks or rupturing the neck , etc. ( The reason i dont emphasize on this and dont tell anyone specifically to stop eating this is because the truth is that producing chicken results in the same, if not higher amount of torture . )
