The best cornmeal pudding I had was one where the baker said she “tun” the cornmeal before she baked it. I guess this was what she was talking about, what you’re calling “scalding” the mixture. It gave it a silky smooth texture with a decadent taste. Thanks for sharing. I’ll try this.
