Can they not use it for breadcrumbs too? I do that with my leftover bread instead of buying it from the shop. Good to hear that there are people who care about our waste and contribute to decreasing it.

I almost never throw away old bread, I just dip it in egg-milk mixture and a little bit of salt and pepper, fry it on some oil and have a DELICIOUS meal. (Also known as French toast). It goes well with cheese spread on top or any kind of meat products (Salami, spam, ham, etc.).

Yes some is used for that. Also some is used to feed cattle such as pigs.

Interesting fact: After the brewery is done making beer from the unwanted bread, the leftover "spent mash" is sold to farmers, to be used as cattle feed. And after the cows are done eating, they produce a valuable fertilizer called manure. So literally NOTHING is wasted. Everything is used for some purpose.

Except all the ingredients labor etc that went into making the bread in the first place. It’s good they can use it in someway, but it hardly seems the best use of it

Yes. Unfortunately, however, cows shouldn’t be eating grains... but you are correct, nothing is wasted.

You mean the leftover from the *small amount* the brewery takes from the sandwich factory? The brewer said that the sandwich factory produces a lot more waste than they use for beer.

Saying "nothing is wasted" is disingenuous. While it's better than just tossing it in the trash, much of the time, labour, capital, inputs, storage and handling, transportation and opportunity cost is underutilized. It would be better if the bread maker precut the ends off and used it to make value-added products like breadcrumbs, croutons, breading etc.

Most the bread ends at my family business was used to make breading for fried food, and bread pudding/custard. And we we gave lots to workers to carry home.

My grandparents owned a Delicatessen in Detroit thru the '60s and mid-70s, we used the heels of bread loaves to make garlic toasts. We sold tons of these in bags... rye, pumpernickel, wheat, etc. we just threw it all in together. People loved it!

The supermarket near me is selling the bread ends 2 loaf for $0.99, it has raisins or oats sometimes. Im enjoying the bread ends with avocado 🥑 toast +eggs while watching this😋

idk about this factory, but where i work in Canada we don’t sell day-old bread, and the ones that don’t get either eaten by staff or baked for crustini, they goes to pig feed or the landfill about 50/50. at one point the company that was taking our organic waste went bankrupt; organic waste management is not really very profitable at all. we effectively pay more to send food waste to pig feed than it costs us to just send it to the landfill, not to mention that it’s slightly more labour intensive to separate garbage properly, you can imagine that it’s easier to toss dirty plastic lids, and napkins and banana peel and bread in the same bin, but we cannot throw plastic and cardboard in the pig feed. i think realistically i would speculate that majority of bread waste goes to landfill and incinerators, but not necessarily the vast majority.

"Disgust of the crust" is a sign of poor bread. Probably baked in somebody's arm pit or something. With good bread the crust is, by far, the very best part.

I love a good crust, but it's not suited for a packaged sandwich. These sandwiches can stay in the fridge for a few days. By the time someone picks it up, the crust would go stale.

This sandwich bread isn't the best and a good crust has to have crunch and that doesn't work for a moist ready made sandwich in a plastic packaging.

I save up the ends by popping them in the freezer. Once I have enough I make a delicious bread pudding. I can also pull what I need then toast and grind them up for bread crumbs, or use as a nice piece of morning toast. The ends never ever go to waste. I'm shocked that they can't find a sustainable use for all of the "waste", not just a portion of it. I would think even donating it to a local food bank or soup kitchen would be welcome as they could make or bake many meals with what these companies are throwing away.

Bread ends? In Texas, we call that the “heel” of the loaf. It’s often the best piece. My mother used to claim that the crust had more vitamins than the rest of the bread, which would make the heel the most nutritious piece. I don’t know if there’s any scientific evidence for Mom’s theory, but the heel tastes good.

Lowcountry SC here, we call them heels also. When I was younger(young) I would dig to the back of the loaf to get both heels to make the best sandwich with. When I got older and had to pay for the bread I realized that the heels helped keep the bread in the middle fresh and slowly weaned myself from that habit. 🤓🍻🥪🍞 Ohh, and I forgot the best sandwich bread in the world(best bread period really) that I didn't discover until I was full grown and working in a French restaurant. 🥐🥐🥐🥐🥐🥐🥐🥐! 🤓🍻

In my country, my great-grandmother would buy the ends from a bakery. She soaks them in Ovaltine or coffee drink. They would sell it to her cheap because they were going to throw it away anyways.

Personally I eat the bread ends when making sandwiches at home. It's a nice change from the normal pieces on occasion. Changes things up.

@@mokkaveli Crusts do not really make good breadcrumbs for food coatings among other choices available, as the texture and flavour profile is not ideal. The food industry is highly competitive, and consumers are picky. If the product is not either one of good, convenient, or cheap; then people will not buy it. Environmentally sound is not a core selling point for the general consumer.

I used to work at a store deli and I made premade sandwiches.. I would make tiny sandwiches for myself with the bread ends.

At my house, I make sandwiches with the end pieces of bread or even save it for French toast croutons. The moral of the story is that I still eat them. My mom eats them as well.

We always used our bread ends for breadcrumbs in the stores kitchen. One bakery rack for regular, one for vegan, and one for gluten free.

you would think the fact that they purchase such a large amount of bread would mean that they could have a deal with the bread wholesaler to not include the ends of the loafs, and they use it elsewhere.

I love the crust of bread. Also, I never saw store bought bread without the butts. I call the end of bread butts. My mom use to safe the crust for me and I would eat my friends crust. I love it. Sadly I was diagnosed with celiac disease in my early thirties. I always fell ill after eating gluten food's, I didn't know that it was from the gluten. I suffered from infections for most of my life because of celiac disease. I am very grateful for my healthcare they have taken care of me. My mom helped too. I do miss bread and other food's. I have to be very careful what I eat and touch.

The ends/ crusts go to dog biscuits manufactures " Bonio" eg. They buy all the crusts 100s of kilos a day

I worked for a smaller bakery and they would throw away maybe 2 dumpster of bread each week. Lots of stale bread that didn’t sell it bread that didn’t bake correctly. We had a farmer who picked it up and gave it to his pigs. I hear it’s pretty common

A bakery in Sweden use unsold bread to make nutritions for growing yeast. Old bread (not moldy) comes back with the same lorry. They turn it into sugar with enzymes, just as in the brewery, and then grow the yeast for the next dough.

My son in law works for a bread company in South Wales and they waste two skips full of bread and cakes everyday. Seven days a week .

The left over heels can be use for all kinds of things. Bread crumbs, croutons, bread pudding etc. they could give it to the homeless.

If bread was baked in super long loaves, you'd get fewer end pieces, so ignoring making beer, it would be more efficient, assuming long loaves fit in the oven.

The bread can easily be recycled in to the next fresh breads . The French ,the Germans and now the Canadians using special bread mills that are able to mill fresh breads . All you have to do add a certain percentage back in to the dough and with a bit more water you increase your output as well as shelf life and crumb structure . The best part is all the extra breads that you are create are free

I’ve watched how it’s made and on one episode they used the ends for croutons. They could also be used for breadcrumbs and more. That company could be making more money if they used their initiative and sold on their waste products to more factories etc.

That is insane. I mean, they could give it to shelters, it can be used on recipies, croutons to use on soups or deserts... such a waste. At home the ends are used anyway. On sandwich or toast

I was expecting croutons and bread crumbs, with animal feed as a last resort. I know that some dairy farmers in the USA get stale bread for free (just need to haul it away and unwrap it) and feed it to their cows as a treat (it’s far from an optimal diet).

I’ve never liked how these journalist go into these food factories and you see employees with their mouth covered and gloves handling the food and these journalist are just touching and breathing over stuff. You will find that bread is also used in Digesters to produced gas to make electricity. It is also used as a feed. The by products of this is used as a fertiliser to grow more grains etc

it can also be made into stuffing... or crutons... or animal feed. seems like the salt and other preservatives in the bread would mess with fermentation.

Hard to believe people throw away over 20 percent of bread. I'll bet it's not the working class that do this, I don't even throw away my veggie peelings which go to stock. People say they cant afford good food, but the waste is so excessive.

Since the invention of Panko there's less demand for bread crumbs. Panko is popular specifically because it doesn't have crust so it's fluffier. If there's not enough demand they won't go out of their way to make it. I can imagine that soup kitchens could use them too, either for sandwiches or for croutons for soup and salad, but with most food waste there isn't much incentive to do things like that. Companies need a financial incentive to do that.

THE WASTE?? I personally don't like bread ends but I'll eat them at the end. But, it could be used so much better, or given away (even for super cheap). This makes my soul ache :(

Homeless shelters could make lots of toast and sandwiches for lots of hungry people using all that wasted bread.

How come the remaining bread waste can't go to the farmers for feed to pigs, cattle and chicken? Or be given to families who are on food stamps and the homeless?

Or you take those end pieces season them roast them again , chop them and then you have croutons. How is it that a manufacturing company not come up with that concept
