Hi guys,
How is everyone doing? I learned a new phrase this week called cabin fever. Someone asked if I had cabin fever yet and I didn't know what it was. To be honest, I have been feeling a little unmotivated and I haven't stayed on top of my routines as much as I should have. That means I'm going to challenge myself for the next three weeks start my day with five mindful breaths! We should all challenge ourselves to do something everyday consistently and call it #MeTime.
This video might be my favorite What I Eat In A Day yet! I was able to share my first ever recipe that I cooked when I was twelve years old, a really healthy tasty vegan vegetable tajin that you can try to make with vegetables that you have from your local supermarket. I've been making granola twice a week now so we always have a fresh batch. Who here has tried to make my granola recipe before? I love the way my home smells after we make a fresh batch of granola.
I'm not sure if this is your first time watching a video, but thank you for being here with me today. If you're not subscribed it would be amazing if you decided to join our little community. -2 cups of oats
-½ cup of sunflower seeds
-½ cup pumpkin seeds
-½ cup hempseed
-½ cup chiaseed
-( flaxseed is also optional)
-1 cup shaved almonds or almonds in pieces
-1 cup pecan nuts in pieces
-½ cup of hazelnuts in pieces
-Add a pinch of salt
-Maple syrup
-½ cup of melted coconut oil
-350F or 180C for 20 minutes in oven
Lunch:
-Ezekiel Wrap
-Rice
-Black Beans out of a can
-Red Bell pepper
-Tomatoes
-Onion
-Mozzarella
-1 Egg
-Spices: Paprika, Cumin, Salt Pepper, Chili Powder
-Toppings: Jalapeños, Coriander, Jalapeno sauce

You can snack, just snack on veggies & hummus or fruits or nuts. Thats what i do, it keeps the guilt away.

The pronunciation of the tortilla,in english is "Tortiya" with the sound of the "y",i know it cause i´m Mexican;and traditionaly here are made by corn,but not the sweet one.

In Spain we call “tortilla” to the spanish omelette. And is pronounced the same, “ll” is pronounced like “Y” in English.

​@@SanneVloet To some extent I think it might also be a European vs American pronounciation difference - I grew up learning "double L = Y" so for instance I pronounce paella as pie-ae-a, but in the UK I get "corrected" by people who say pie-ella

I’ve found chickpea chips or roasted chickpeas are a really tasty snack. I season them with Chile powder, paprika, a little pepper and brown sugar. 😋 Super yummy!!

When you added rice to the beans in your lunch recipe I got exited because it looks similar to a traditional dish here in Costa Rica called Gallo Pinto. Hahah it’s not exactly the same, but looked like it. Loved it!!! ❤️

One of my first memories of getting into the kitchen was making my mom 'milk.' Bless that woman because I just mixed flour and water and she pretended it was good as she took sips from the weird concoction. I think I was no more than three, so super early memory. But the actual cooking I pulled off when I was five was making pancakes with bananas with my dad. ❤

my oldest sister is a surgeon in new york city and spends most of her hours in the ICU - she works about 80 hours a week, and she recently came down with a cold. im very worried about her, and although we live only a train ride away from her, she isnt allowed to come visit us.

I guess there isn’t much that we can do other than going with the flow and obviously staying safe. In order to cope with this situation I think it’s important to hold on to a daily routine and make sure to stay in touch with all loved ones via factime etc. btw really enjoyed watching ur video once again - such a sweet soul x

Love your videos, and thanks for supplying us with some positive content these days! Just wanted to give a little tip - Israeli Couscous and Couscous are actually two very different things, despite the confusing name! That's why the directions on the package were to fry the Israeli Couscous a bit in oil before putting the hot water. Israeli Couscous is actually more similar to pasta in the way that you cook it (and also in the way the little flakes are made) while Couscous is crushed durum or semolina which cooks in hot water (the Israeli Couscous, or Ptitim as they would be called in Israel, wouldn't really cook well if you just put them in hot water). Hope this will be useful to you in future cookings! :)

Love your cooking videos and coffee talks!♥️♥️ First thing I cooked was cookies when I was 7 years old. Now I'm a pastry chef who doesn't care for sweets. 😂 Careful with the rice. It can go bad pretty easily when left out at room temp overnight.

When I was about ten years old I wanted to help my dad out and make some easy food, it was storebought meatballs (that got burnt) and pasta (didnt wait for the water to boil so they got overcooked) for my sisters and dad, and for me I lade my favorit springrolls, they got perfekt 😅

I make less food for myself, because obviously I'm burning less.. I try to do some wii fitness or just plain stretching/pilates, using weights 1kg,... I'm also cleaning more than before (big difference) and this gives me exercice too :) And mental health of course i also very important to stay fit

Great video! I had to laugh though when you asked how we are using our extra time right now. I'm a full time working mama (plus with a part-time private practice) with 3 kids so now my husband and I trying to work from home while homeschooling and taking care of our 3 kids (ages 2-9) is busier than our schedules before!

Good morning Sanne! We could all draw or paint something HAPPY and NICE to send to a hospital/s in our home towns to cheer up the patients that have COVID-19 and laid up in hospitals. I would call the hospitals first to see if they would be accepted. I just feel so sad that people are fighting for their lives in hospitals and would like to make their days a little better. One idea would be to put the drawings and paintings on youtube or something to where they would know that it is for them. BTW, you don't have to be artist...

i really really love your approach to food. its not complicated, it has a great balance or all the macronutrients, its whole food and its focused not just on the nutrients but also the taste and flavour. i like how your aren't afraid to use oils and salt and all those things that so many people preach not to use. keep doing what you do we love it 💜

my mom started nursing school when I was 8 and wasn't home much, so I cooked a LOT of meals by myself since my dad didn't cook much. I think the first meal I ever made was spaghetti "goulash"! It was spaghetti bolognese with corn, mushrooms, and onions. Actually very delicious and would feed me for a few days :) I still make it today for my husband

Love from Israel 🇮🇱!!♥️👏🏼 Its seems like Its actually not koskos😅 Its calld “ptitim” sort of little pasta. Koskos made from semolina. And its sooo good with vegetables soup!!( we make a pot of vegetable soup and pot of koskos and then put on a plate koskos with alot of the vegetable from the soup and a little bit of the soup itself and mix it together 😍

I find coconut yogurt are often auditioned with a bunch of ingredients that are unhealthy... so annoying. It’s easier to find dairy yogurt which is more natural. ...

Yes! I live in Greece and there is no variety in the supermarkets. The only coconut yogurt they have has artificial sweetener and corn flour. The other option is to buy from the health food store which is crazy expensive, so I usually buy some full fat sheep yogurt🙄

My mum taught me how to make "toad in a hole". Which is a piece of toast with a circle cut out of the middle (done with the brim of a cup), buttered on both sides, and then fried in a pan with an egg cracked in the middle. You flip it over half way for an over easy cooked egg, and VOILA. My favourite part was the piece of bread in a circle shape that was left over from the middle which I would fry on its own until it got extra crispy! On weekends when I would wake up before my parents I would make it for myself or me and my friends of we had a sleepover the night before. I think I was around 7 or 8!

We should obviously talk about how our diets can improve our immune system. Here in Fiji, we have a lot of greens - fruits and vegetables. One thing we are taught to drink in the morning is pawpaw leaf juice. Not not pawpaw juice the pawpaw leaf juice. It has a lot of benefits and can really kick your flu in the behind.

this has got to be one of the most complex what i eat in a days ever - not saying it’s a bad thing AT ALL. all i’m saying is, i watch a lot of these and there’s always like the usual avocado toast or baked salmon or açai bowls (okay your breakfast was somewhat similar) but wow thank u for these new ideas!💛

Maybe get family friends to deliver their shopping. Also call them daily to keep informed on the situation over there and reassure yourself that they are fine. You could also try and get them home delivery slots. If they're lonely try a zoom chat it's a great way to catch up and you can have lots of people on it and it's private(invite only) it's also free and easy to set up. Hope this has helped xx
